24.01.2022 The simple things in life. Hellfire is a sweet sauce that goes well with anything, but a nice vintage cheddar is a personal favourite pairing of mine. It’s a mild to medium heat, made with Moruga Scorpion and Habanero peppers - the molasses adds a real nice depth to the flavour profile.

We have crammed almost 2 kg of our signature blend of 24 month aged Reapers into just under 2 litres of sauce so this wing sauce is as hot as the seventh circle of Hell.

Hash Smash Patties Maple Bacon Homemade Cherry Tomato Relish, Fried Egg, Grilled Onion Scallion Scorpion Cream Cheese @13_angry_scorpions_hot_sauce hellfire habanero sweet hot sauce On a Toasted Sesame Seed Bagel Still can't decide if I'm more impressed at the name of this burger or how delicious it was! Besides the realisation that sausage meat does not smash like mince AT ALL everything went exactly as planned! Beef patties were juicy and super tasty, each layered with cheddar cheesy goodness! The hash smashie worked a damn treat shallow fried; nailing a crispy coating! Relish gave that fresh element amongst a solid amount of crispy AF maple bacon and grilled onion with a sunny side up egg on top for a good yolk drizzle- manizzle over it all! A last minute cream cheese concoction from @metor_rya was a God send that truly took this burger to NEXT LEVEL PERFECTION! The thick, creamy spread with combining flavors of spring onion and sweet hot sauce was phenominal! A great finisher to an epic brekky burgerall on a toasted bagel; perfect to hold such a monster! Who needs this burg to cure the Sunday morning hangover?

If your answer is no, well I suggest you do something about it. Rich, crumbly & soft, this cheddar has got to be one of the best - so, naturally, I decided to put it in a burger... I decided to create a burger with sweet & spicy elements, to contrast against the richness & sharp flavour of the cheese...with added PB, because it honestly just goes with everything - bagel bun - dark roast peanut butter - jalapenos - 6 smashed patties - 6 layers @merseyvalleycheddar sharp cheddar - maple, strawberry & habanero jam featuring @13_angry_scorpions_hot_sauce 'Jekyll & hyde' hot sauce While I wasn't super happy with the edges on these patties, being more pressed than smashed, I really enjoyed the flavour combo, & can you really go wrong with a cheesy, sweet & spicy stack?
