16.01.2022 Wendy Hargreaves from fiveofthebest.com is my guest for Whats For Dinner? tonight. Shes been kind enough to give me her recipe for "cheese and pepper" pasta. Thought Id share it with you. Enjoy... Literally "cheese and pepper", this recipe is a delicious as is it simple. INGREDIENTS... Pinch of salt I 500g packet of spaghetti 3 tbs butter, chopped up 1 tsp freshly cracked black pepper 1/2 cup finely grated parmesan 1/2 cup grated pecorino. Bring a big pot of water to the boil. Add salt and pasta and cook, stirring occasionally. Drain a minute or so before the recommended time, reserving about a cup of pasta cooking water. While the pastas cooking, melt 2 tbs of the butter in a large frying pan over a medium heat. Add pepper and swirl until toasty brown about a minute. Add 1/2 cup of pasta water to the butter and bring to a simmer. Add pasta and remaining butter. Reduce heat to low and add parmesan, stirring and tossing with tongs until melted. Remove pan from the heat and add the pecorino, stirring and tossing until the sauce coats the pasta, and pasta is al dente. If the pasta seems a bit dry, add a bit more pasta water. Transfer to bowls and serve - with more cheese. (Add more pasta water if sauce seems dry.) Transfer pasta to warm bowls and serve.
