18.01.2022 Well time to release with is bad boy on the world. Our new single varietal for 2020, the Yarlington Mill. 100% freshly pressed juice and yeast left to slowly ferment over a six month period. Cider has been coarse filtered only which allows for a slow bottle fermentation without the usual thicker bed of yeast sediment that can be off putting to some people. An easy drinking dry cider, smooth rounded tannins and moderate acidity. Very very happy with it and can only imagine how... it would have gone at the cider awards. First bottles are for @timothyajay__ and @cidertom whom I’m sure will not be backwards about their thoughts! Lol Will be available for sale in around three weeks. #3sonscider #cider #australiancider #realcider #cideraustralia #yarlingtonmill #madeincanberra #handmade #2614

18.01.2022 Ahh, a cool change has just hit. It’s making this Yarlington Mill taste even better! Can probably see the lucerne bales in the background. They’ll be spread out for orchard mulch as an awesome nitrogen replenisher and weed suppressant over the course of the week. #3sonscider #cider #realcider #englishcider #canberra #madeincanberra #visitcanberra #handmade #2614

11.01.2022 Well as this year is beginning to draw to an end, it is time for a rant of some rubbish that's happened over the past few weeks. It would appear that COVID has become an excuse for just piss poor customer service when in reality it is just bought it to the forefront. For example: 1. Package sent from us here in Canberra to a mate in Armidale. Nothing unusual in that, normally takes around 4-5 days at best. Well we are currently sitting at a few days short of one month sinc...e pickup from our place. Despite multiple calls to their CBR based office, no-one seems to know exactly where it is, and no call backs despite the promise of one. 2. Package purchased Sunday night. Marked as shipped a few hours later. I'm thinking "oh wow cool, they're on board for the whole xmas thing and it will be quick" Strike two. Three days of calling them as well to be told we will call you back to, to then being told oh yeah it was shipped on Tuesday but I can't give you a tracking ID. I'll get back to you with it.... 3. Finalising the insurance claim on the ute after the January hailstorm. A normally other wise good insurance company has ignored a receipt for claim for the sign-writing for over a month, and as soon as I called to see where it was at, said it will be actioned immediately and I please supply some certain details (already supplied in the email, but we'll ignore that) I don't care what your business is, people seem to have forgotten the most important tenet of all successful business and ensuring customer loyalty is clear and regular comms. If something has gone wrong, tell people, and if you've stuffed up, admit it. I've learnt the hard way across the years in various jobs at a customer service level this and it still should ring true now and for many years in the future. Sorry end rant, but I'm sure this will ring true for many of the small business operators out there. D

11.01.2022 Not the prettiest of picture I know, but the freakingly best smell to a cider maker. These are the windfalls from one of our Breakwells Seedling coming in about six weeks earlier than they should, but the smell. OMG. So fragrant. As a cider maker it’s hard to describe what it does but it’s just the best smell in the world. #3sonscider #apples #cider #ciderspples #realcider #madeincanberra #handmade #2614

09.01.2022 Just topped up the perry tester with some more pear juice. Talk about a vigorous ferment underway! #3sonscider #perry #cider #realcider #realperry #madeincanberra #handmade #2614

05.01.2022 How do you know she’s a witch? Not a bad drop and makes a nice change from cider on a muggy evening. #3sonscider #cider #goldenale #witches #weighsthesameasaduck #montypython

04.01.2022 Finally. Project Python has commenced. WTF is that you may ask? Well PP is the first trial run for a cross between a cyser and metheglin mead - mead made with the addition of apple juice, some of the Yarlington Mill SV, elderflower (this is where the name of the project comes from), juniper, bay leaf, rosemary and lemon. Will be looking at an end ABV of around 9% as a sparkling 750ml. Sorry @timothyajay__ no wild ferment here. Will be using 71b. Honey supplied by the aweso...me Kurt from @thehoneysmith in Fisher and it’s simply divine. If you’re in CBR go and get some from him. #cider #cyser #metheglin #3sonscider #handmade #madeincanberra

03.01.2022 Come on down to the Pialligo Estate markets today (yeh I’m just finishing up labelling) and grab some of our wonderful ciders. We will have with us today Naughty Nanna, Yarlington Mill, Ginger Apple, Hoppy Poppy and our Methode Tradtionelle.
