24.01.2022 SALTED CARAMEL POPCORN 120g unsalted butter, 3cm cubes 2 tbs canola oil 165g popcorn kernels... 2 cups caster sugar 1/2 teaspoon sea salt 1. Preheat oven 170C. Coat 2 lge baking trays with 20g butter. 2. Heat heavy large pot over med-high heat. Add oil, popcorn kernels & cover pot. Cook until first kernels begin to pop. using pot holders & keeping lid slightly ajar, shake pot occasionally over heat as kernels pop, about 7 min, or until kernels stop popping. Immediately transfer popcorn to baking sheets, dividing equally. 3. Heat med heavy saucepan over med heat. Add sugar. cook without stirring about 5 minutes, or until sugar melts & turns a deep amber colour. As sugar browns, tilt pan to distribute melted sugar DON"T stir. Once its deep amber colour, remove pan from heat & grad add remaining 100g butter, whisking until butter melts & completely blended into caramel. 4. Working quickly, drizzle hot caramel over popcorn. Toss with two wooden spoons to coat popcorn lightly. 5. Lightly sprinkle sea salt over popcorn. 6. Bake caramel corn about 5 minutes until begins to melt again. Toss caramel corn to redistribute caramel more evenly, & continue baking for another 5 minutes. Toss again to redistribute caramel & allow to cool completely. crunchy & delicious when cool. See more

The kids were given five minutes to find the balloon with their name on it, but though they searched frantically, no one found their own balloon. Then the teacher told them to take the balloon closest to them and give it to the person whose name was on it. In less than two minutes, everyone was holding their own balloon. The teacher said to the children, These balloons are like happiness. We wont find it when were only searching for our own. But if we care about someone elses happiness.... it will ultimately help us find our own.

07.01.2022 SALTED CHOCOLATE & PISTACHIO FUDGE 50 g butter, chopped 395 g Sweetened Condensed Milk 1 tsp vanilla bean paste 1 tsp sea salt flakes... 400 g Dark Chocolate, broken into pieces 70 g coarsely chopped unsalted pistachios 1. Grease & line base & sides of 20cm square cake pan with baking paper. In a medium saucepan, add butter, sweetened Condensed Milk, vanilla and sea salt flakes, cook stirring over medium heat for 5 minutes or until butter is melted and mixture is well combined; remove from heat. 2.Stir through Dark Choc until melted & mixture smooth, add pistachios, stir until well combined; pour mixture into prepared pan. Refrigerate for 3 hours or until set. Use a hot knife to cut into 36 squares. See more

Melt 200g of the sugar in a pan over a medium heat until golden, beat in 400g more, along with the double cream, butter & 1 teaspoon of sea salt. 2. Cook, stirring, over a medium-high heat, until it reaches 118C on a sugar thermometer (always be careful when boiling sugar). 3. Off the heat, beat with an electric mixer until thick. Pour into a lined 20cm x 20cm tin and spread out evenly with a spatula. 4. Leave to cool, then chill in the fridge for 2 to 3 hours to set. Sprinkle with a pinch of sea salt, cut into 2 to 3cm squares and serve. See more
