14.01.2022 Tofu Stirfry with Chilli & Lime INGREDIENTS 340 g Firm Tofu... 3 cup Cooked Brown Rice 1 medium Capsicum 2 cup Broccoli Florets 1 medium Zucchini cup Spring Onions whole Red Chilli cup Tamari Sauce 2 wedge Lime 1 serve Extra Virgin Olive Oil METHOD Step 1 Cook the rice as per packet instructions. Step 2 Roughly chop the capsicum and zucchini and finely dice spring onions and red chilli. Step 3 Spray some olive oil in a frypan, then place over medium heat and add the chilli and spring onions. Step 4 Saute for 1-2 minutes, and then add the remainder of the vegetables Step 5 Toss the tofu and veg, and when the tofu starts to brown (5-7 minutes) add the tamari sauce. Step 6 Stir the tamari through the vegetables and remove pan from the heat. 13.01.2022 Overnight Blueberry Yoghurt Pot Dietary Info: GF, V INGREDIENTS ... cup Greek Yoghurt 2 tbsp Quinoa Flakes 9 tsp Raw Walnuts 1 cup Blueberries tsp Ground Cinnamon 1 tsp Maple Syrup METHOD Step 1 In a jar, tupperware container or bowl, stir the quinoa flakes through the yoghurt. Step 2 Add half the blueberries, cinnamon and the maple syrup, then stir. Step 3 Pour the remainder of blueberries over the top and sprinkle with more cinnamon. Step 4 Cover the jar, container or bowl and leave it in the fridge overnight. Step 5 In the morning, top the overnight blueberry quinoa yoghurt with chopped walnuts, and dig in . . #9roundgeelongwest
