25.01.2022 #saydontslay There are so many things that happen behind the scenes of a Food Business. So many beautiful human beings from all walks of life, doing the very best that they can. Some days are amazing and it all falls into place without any effort, but like everybody else on this crazy journey called life; these days are rare. Today we’re asking you to see beyond the beautifully set table, beyond the perfectly poached eggs, the latte art, the crisp greens. We’re asking you... to see the humans who are probably struggling just like you, to do the best they can in spite of what else may be going on. We’re asking you to be kind today and see the absolute magnificence of what they’re able to accomplish in spite of their circumstances. Today is your chance to be hospitable. Let them know just how courageous they are and how much you appreciate them. 16.01.2022 We were given 16kg of passionfruit today and smell of these beauties is filling our space. We’ll be processing them and making curd & jam from their pulp and my favourite jam with their skins. Hoping to have it ready in time for Christmas. nims xx

16.01.2022 Labeling 100 of these beautiful little jars tonight for a corporate client. I’ve made Punpkin Pie Jam, Strawberry Cinnamon Doughnut Jam, Banoffee Pie Jam and Cherry Strudel Jam. 14.01.2022 I’ve been preoccupied with all the good things and work behind the scenes for @miseenplacebonnefemme and have had to pop all the fun I’d promised myself with this beautiful idea on hold; knowing that at some point it would be time again. Then I found a collection of images from @andreahuelinartist current exhibition at @murraart. This is one of her beautiful canvases that spoke so clearly and let me know the time had almost come. It’s as though she’s taken the contents of my heart (and shelves) and painted them ready to share. All that’s missing is my crazy jam. I’m so excited to get back to it. Soon. nims xx

08.01.2022 I love playing with flavour and matching ingredients for mouthfuls that are a little quirky but still balanced and satisfying. Today’s 30kg pot of jam is Strawberry, Apple & Basil. I’ll finish it with a little salt and a nudge of balsamic. This’ll be good on fresh baguette with a thick slice of triple cream Brie or a schmear of goats curd. nims xx
