What you'll need :... 100g (1/2 cup, firmly packed) brown sugar 80ml (1/3 cup) maple syrup 80ml (1/3 cup) Capilano Dark & Bold Honey 1 tablespoon dijon mustard 1 whole leg ham on the bone Whole cloves, to stud. .... The how to : Stir the sugar, maple syrup, honey and mustard in a bowl until the sugar dissolves. Preheat oven to 170C. Line a large baking dish with 2 layers of non-stick baking paper. Place an oven shelf in the lowest position. Remove all other shelves. Use a sharp knife to cut around the shank of the ham, about 10cm from the end. Run a knife under the rind around edge of ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat. Score the fat in a diamond pattern, about 5mm deep. Stud the centres of the diamonds with cloves. Transfer to prepared dish. .. Brush one-third of the glaze over the ham. Bake, brushing with glaze every 25 minutes, for 1 hour 30 minutes.. ... TEXAN-STYLE BARBECUE SAUCE 1/2 cup (125ml) tomato sauce 1/4 cup (55g) brown sugar 2 tablespoons apple cider vinegar 1 tablespoons Worcestershire sauce 1 tablespoon American mustard 1 teaspoon ground paprika ... HOW TO: Preheat a covered barbecue on low. (Alternatively, preheat oven to 150C.) Place ribs in a shallow roasting pan. Combine cumin, paprika, salt, mustard powder, if using, fennel and pepper in a bowl. Sprinkle over both sides of ribs. Cover pan with foil. Roast in covered barbecue using indirect heat, or in oven, for 3 hours or until ribs are very tender. 02.01.2022 Who doesn't love a good piece of Pork Belly...... .... NOT sure on how to cook it. Here's a tasty recipe that is sure to be a crowd pleaser . Crispy pork belly with cherry chutney Ingredients ... . 1.5kg piece pork belly 1 tablespoon olive oil 1 red onion, finely chopped 2 garlic cloves, crushed 1 garlic bulb, extra, halved crossways 600g fresh cherries, halved, pitted 2 tablespoons brown sugar 1 cinnamon stick 1 whole star anise 2 whole cloves 2 tablespoons balsamic vinegar 2 tablespoons fresh orange juice 2 orange rind strips, 2cm W x 6cm L 1 orange, sliced Fresh thyme sprigs, to serve . Step 1 Place pork on a rimmed baking tray. Use a very sharp knife to score skin crossways, about 5mm apart. Pat skin dry with paper towel. Place in fridge, uncovered, overnight to dry out skin. Step 2 Meanwhile, heat oil in a saucepan over mediumlow heat. Cook onion for about 4 minutes or until softened. Add garlic. Cook, stirring, for 30 seconds. Add cherries, sugar, cinnamon, star anise, cloves, vinegar, juice, rind and 250ml (1 cup) water. Bring to a simmer. Reduce heat to low. Cook, stirring occasionally, for about 25 minutes or until liquid has reduced and mixture is thick and pulpy. Transfer to a bowl, set aside to cool then cover and place in the fridge until required. Step 3 Preheat oven to 160C/140C fan forced. Line a rimmed baking tray with baking paper. Transfer pork to tray. Add orange slices and extra garlic. Roast for 1 hour. Remove and reserve garlic and slices. Increase oven to 230C/210C fan forced. Cook pork for a further 20 minutes or until skin has crackled.
