25.01.2022 Last of the crab pots going in the water today. We will be starting again to produce blue swimmer crab meat. We use 7.4 kilos of cooked crabs to produce 1 kilo of premium crab meat. Chefs that do the maths rapidly realise why the pay the hideous price we charge Friday we finally will have a processing factory that smells like it should the smell of fresh cooked crabs after a 2 year absence is going to be sensational
23.01.2022 Looking for something delicious and easy to make. Not the most glamourise photo but heres what I threw together last night. Its really quite easy. What you need 300ml heavy cream... 1 bunch broccolini 1 bunch continental parsley 3-4 cloves of garlic 1 lemon Decent size piece of butter with a splash of oil Salt and pepper. Good quality linguini And of course a pack of our premium hand picked crab meat (available at all farmer jacks stores across perth) How you do it. Boil a saucepan of water and drop in linguini (or if you want to cheat, boil your kettle poor over linguine and put on stovetop) Heat butter and oil in saucepan Add minced garlic and let your kitchen fill with this incredible aroma Add cream and chopped broccolini, let this simmer away Add juice of lemon and salt and pepper Drain linguini (do not rinse) and set to the side. Stir in your crab meat to the creamy mixture (as our crab meat is cooked you only want to warm it up) Add the linguine and the chopped parsley Toss around coating the pasta with all the sauce. Serve and enjoy * to add a little extra to your sauce add a glass of dry white wine to the creamy mixture, but remember a good tip in the kitchen is to only cook with a wine you would actually drink. Serve your pasta and enjoy with a glass of this wine too

22.01.2022 Have you picked up a copy of the latest weekend Australian paper. If you havent already let me fill you in on an article in the magazine. John Lethlean, one of Australias leading food writers, speaks of special foods combined with moments on the water and he so eloquently writes of a memory, "Eating raw blue swimmer crab from pots lifted a few kilometres off Carnarvon in WA - to date the best crab ever. Did it help that a pod of humpbacks came along and began to breach? Probably. But raw crab straight from the sea is a revelation". Its reading or hearing peoples memories and experiences being so incredible and ever lasting, and as John put being a "revelation", that makes all the hard work we put in worth every second.

19.01.2022 After two years its been fantastic to see the blue swimmer recruitment going from strength to strength. Our first month has been excellent and the stock is looking stable and this is being reflected by the consistent catches. Shark Bay was named for the apparent reason there is a lot of sharks in the region. Over the last few years the sharks seem to have exploded along the West coast and we now have between 30 to 50 sharks follow our boats during our fishing day. Fishermen ...both commercial and recreational find it frustrating as they attempt to land fish in Shark Bay that havent been attacked by sharks as they are bought to the surface. Continual requests to conduct some scientific research into why the numbers have exploded are no longer falling on deaf ears as in the last few months there has been "interactions between three people and sharks in the Gascoyne region". That is the governments ways of saying THREE SHARK ATTACKS. Our main hope is that no more people are attacked as a solution is searched for that delivers the required outcomes for all concerned parties See more

A team of 10 industry members from the catching, harvesting, processing, wholesale, retail, and value adding sectors will be looking at potential ways of adding to Australias Seafood Security for future generations. So looking for unique ideas from FOOD PEOPLE to take along that will offer great food solutions and 100% utilization of the industries catch.

15.01.2022 One of our vessels has commenced the fishing the Shark Bay Pink Snapper We use the Ike Jime handling technique when catching these fish to produce the highest eating quality fillets Our Sashimi grade fillets are served in many of Australias fine dining restaurants that look to create a culinary dining experience for their patrons This season we will also process and individually vacuum pack our sashimi grade fillets before freezing to allow consumers to cook quality Australian fish at home supplied directly from the fisherman
13.01.2022 Starting to get the processing operation and fishing vessels sorted in Carnarvon. Just waiting for what has been verbally confirmed to be confirmed in writing by Fisheries WA. We stopped fishing on 17th June 2011 for crabs due to impact of floods plus the high water temperatures that wreaked havoc with the abalone, crab and scallop stocks around the Gascoyne coast line. Recovery looks good and we are starting fishing in November for the Shark Bay Blue Swimmer Crab again. 04.01.2022 High Pressure Processing (HPP) has resulted in our crab meat now being supplied fresh with a 28 day shelf life. What is absolutely amazing is that eating just picked fresh crab meat or crab meat that is 28 days old the appearance, texture, flavour and quality are the same. Our first HPP crab meat for chefs will be processed on Tuesday 17th January. This will allow chefs to be creative with confidence This process will be a game changer for Australian seafood lovers as the product range available grows Abacus will continue with its R&D using this process as we look at what ready to eat wild caught seafood meals can be produced Stay Tuned
