20.01.2022 Many people believe, that storing food in the fridge "kills" bacteria. Storing food in the fridge doesnt "kill" bacteria, it slows the growth of bacteria. Even this is not true for Listeria Monocytogenes which can grow at temperatures as low as -5C. http://foodsafety.asn.au/topic/fridge-freezer-foodsafety/

18.01.2022 Outbreak of Salmonella in a cafe in ACT is a serious reminder that we shouldnt take food safety lightly. Salmonella is commonly found on raw chicken and depending on the level of hygiene in the kitchen can contaminate other surfaces. If is not recommended to wash chicken before cooking because of risk of contamination of other surfaces in the kitchen. The outbreak was linked to the use of dish cloth and tea towel. A dish cloth and tea towel use in the restaurant should be ...a warning sign that there is an increased risk of food contamination. The cafe owner is confident they would re-open soon, but the financial implications of this outbreak can be detrimental. http://www.canberratimes.com.au//lawyers-preparing-individ

16.01.2022 Food Safety: To wash or not to wash raw chicken, that's the question. A CDC tweets not to wash chicken caused an online debate. This post meant to educate consu...mers on safe handling of raw chicken but quickly turned into a heated online debate. As health inspector, I've been involved in discussions with food operators about safe handling, processing, cooking and serving of poultry due to Salmonella risk, but the 'washing of raw chicken' is always the most sensitive topic. 13.01.2022 Adequate allergen declaration? The Food Standard Code requires food businesses to ensure that allergens are declared legibly and prominently. Labels must not be false or misleading. The manufacturer of this food decided to sum up allergens into a allergen summary statement, however they omitted nuts (walnuts) and there is no soy or milk in any of the ingredients they stated in the ingredients list. It would appear they have some work to do... #allergendeclaration #allergens #foodallergens #knowyourlabel #absolutefoodsafety #foodlabelling #food #ingredients
