23.01.2022 Looking forward to tomorrow’s wort kit brew, a porter @ 20 litres or stout @ 17 litres. Based on 19th century British grain bills, featuring lots of Amber and brown malts, little bit of black and the rest ale malt. No crystal malt. There were four beers, Porter, single, double and triple stouts. For any one brewery they were typically the same grain bill, with the water to grain ratio changing and hop adjustments. They were often parti-gyled. As a style, Russian Imperial Stout is a bullshit anachronism. It’s a bit like saying there is a type of jam called By Royal Appointment. While double and triple stouts were popular with the Russian Court, and some breweries got the By Royal Appointment, it doesn’t create a style RIS. Rant over.

09.01.2022 I ’ve set up a dedicated information website for the wort kits. Have plenty of kits, brewed the Pilsner on Friday, it’s the Amarillo tomorrow, and XPA next Friday.

09.01.2022 NEIPA wort kit at 16.8 Plato, SG 1067, hopped with Belma, Cascade and Cashmere. Hopping schedule: first wort, one minute, and whirlpool.

08.01.2022 Last of the essences, all half price.

06.01.2022 Brewing today’s wort kit using flaked rice: Ultra Pale Ale. Hopping will be Cascade and the tropical Hort 4337 from Aotearoa. The hops will be late and in the whirlpool.
