Pasta Nerano is a Zucchini pasta and is named after the fishing village of Nerano, which is located in the Amalfi region. It was created by a lady called Maria Grazia back in the mid 1950’s in her own restaurant, named Maria Grazia. Which her 2 children still run today. The historic Restaurant is located right on the beach. We transform the Zucchini into a Puree and then infuse it with pecorino. It comes out bright green in colour, creamy in texture and delicious in favour. It’s a very rare dish here in Australia. Even the authentic Italian will fall in love.
