15.01.2022 Turkey and Quinoa Salad Recipe INGREDIENTS 180g Quinoa, cooked 40g Roast Turkey, sliced... 1/2 Medium Cucumber, chopped Small handful of Baby Spinach leaves 100g Low Fat Plain Yoghurt 1 tsp Mint, chopped METHOD 1. Prepare the cucumber and spinach leaves. 2. Cook the quinoa as directed on the package. Place the quinoa, turkey, cucumber and spinach leaves in a bowl. Toss gently to combine. 3. Combine the chopped mint with the yoghurt. 4. Top the salad with yoghurt dressing. Enjoy!
