22.01.2022 Recipe Time!!!! This recipe is ideal for nourishing the Stomach and spleen. The chicken soup base will support and warm the Middle Jiao while nourishing the Qi and Blood. The sweet potato can help with digestion and bowel movements while increasing energy. It also has a nourishing and moistening effect on joints and tendons and tastes great. Celery is great for clearing heat but it also reinforces the Stomach and has been proven to lower serum cholesterol levels and Blood pre...ssure. Kale is a super food; it has anti- cancer properties, reduces oxidative stress within the body, is packed with vitamins K, A, Iron, calcium and strengthens the Stomach, stops pain and helps with Lung congestion. This recipe is quick and easy to make, great for young and old and contains many necessary vitamins and minerals. Its important to nourish the Earth so why not start by making some delicious chicken ball soup. SOUP BASE: 2 CHICKEN CARCASSES Make sure you wash them well. 2 CARROTS 2 STICKS OF CELERY 1 LARGE ONION CUT IN HALF 20 GOGI BERRIES AND A BUNCH OF CORRIANDER ROOTS. Fill a large pot with filtered cold water, place washed chicken carcasses, carrots, celery, onion, goji and coriander roots and bring to boil. Continue to cook on medium heat for at least an hour. Add salt to taste and skim the surface when needed. Allow to cool then strain the stock and discard all the ingredients. The soup base is now ready. CHICKEN BALLS: 2 CHICKEN BREAST SALT AND PEPPER 2 SPRING ONION FINELY CHOPPED CORRIANDER STEMS FINELY CHOPPED SESAME OIL Mince/ finely chop a couple of chicken breast, add salt and pepper to taste, finely chopped spring onion, coriander stem and sesame oil and mix well together. Roll into small even ball ready for cooking in the soup base. VEGETABLES FOR SOUP: DICED SWEET POTATO DICED CELERY BLANCHED KALE Prepare as much or as little as you wish as it is all going into the chicken stock. Tip the stock into a clean pot and heat, add the sweet potato and celery and cook for a few minutes. Add the chicken ball to the simmering stock next as they dont take long to cook. Finally add the blanched kale and cook until tender. Your soup is now ready to enjoy, ladle into a bowl place some freshly chopped spring onion on top and enjoy.
