17.01.2022 Feeling Stuck or Frustrated? It might be because of the arrival of Spring! We know Spring has arrived because the evidence is everywhere in nature. The deciduous trees begin to bud and their leaves sprout. We start to feel more energy, more interest in getting outdoors, tackling projects and making plans. Why is it then that we may be feeling Stuck, Tense, Frustrated or Angry? It could be due to the fact that many of us lead sedentary lives (desk job) or have stressful int...erpersonal relationships. Nature is wanting to move, grow, expand. If we dont follow this natural cycle, we begin to feel like a pressure cooker that must be released in some way. If the enegy cannot be channelled into movement & action, then it leaks out leading to conditions such as restlessness or nervous habits like nail biting; or it can manifest as angry attacks on others or snide, cutting remarks. This is why many people go to the gym, run or do some other vigorous exercise in order to release the pent-up energy. 16.01.2022 I just discovered this delicious oats pancake recipe. I tweaked them to make them GF and have made it twice in a row. It will definitely be on tomorrows breakfast menu Gluten Free Oats Pancakes Recipe:... 1 cup Traditional Rolled Oats 1 cup mylk (almond/rice/soy) 2 large eggs 1 tablespoon oil (grapeseed/olive/coconut) 1 tablespoon coconut sugar 2/3 cup of flour (brown rice/tapioca etc) 1 teaspoons baking powder teaspoon salt teaspoon ground cinnamon (optional) Method: 1. mix oats with milk. Let stand for 10 minutes. 2. Add remaining ingredients to the oat mix. Whisk until combined but dont overmix. Let stand for 5 minutes 3. Fry over a medium hot pan with oil. 16.01.2022 . Dang Gui aka Angelica Sinesis has been used since ancient times. It is a herb that I use in almost every formula to some degree, especially if I am regulating the menstrual cycle. . Within the Materia Medica it is considered a Tonifying and Blood Building herb. It is warm in temperature and sweet & spicy in taste and it smells Amazing!... . There is an old Chinese tale that is told about how women would add Dang Gui to letters to their loved ones. This would convey to the loved one that the sender wanted to hear back from them. In a similar way in TCM we use Dang Gui in a herbal formula to help regulate menstrual cycle and hope for it to return . 13.01.2022 Gardening has become my new thing lately. I started my little veggie patch a few months ago and I've been really digging it Here is a short list of the things it has taught me about life.. . 1. Weeding, just like negative thoughts, is a constant battle. If we dont pay attention to our thoughts, they can overgrow and take over our new plants (ideas). .... 2. A tree was once a seed. Initially seeds need tender care, until they grow roots. Once these roots are established, a small plant will begin to emerge and eventually break through the soil. Don't compare yourself to others when starting any new project or endeavour. There is so much work going on behind the scenes that you are unaware of (like the underground roots system of a plant). Soon enough you will see the fruits of your efforts. . 3. We need day, night and water just like plants to regenerate and grow. Try not to push yourself too hard and get to bed at a decent hour, keep hydrated and enjoy some rays of natural light. . 4. Just like plants get too big for their pots, we also tend to outgrow situations and staying in one spot can leave us feeling uncomfortable and stagnant in life eg: job, relationships, etc. It may be time to open up to new ways of being and stretch yourself (roots) into new territories. . 5. Gardening for me is not about the end result such as the number of tomatoes, corn, green beans or blueberries I have grown. Gardening, just as life, should be is about the journey. I am enjoying tending to my garden, watering and weeding. I take joy in the new leaves and flowers and accept the loss of seedlings that didnt take off, veggies that get eaten by snails. See more

04.01.2022 How gorgeous is this Waratah! I almost postponed my visit to the Cranbourne Botanical Gardens earlier this week, due to the weather forecast. I was lucky to randomly speak to an older, (and clearly wiser), woman who suggested I ignore the forecast I'm glad to say that I followed the good advice and made my way to the gardens and found this beauty. The Waratahs will be in full bloom for at least another week or two and there are so many other beautiful native plants & flowers to see. I recommend you head over if you have a chance and rug up if it's cold

03.01.2022 I am loving these Paleo Vegan Tortillas. I am sure you will too. They can be topped with literally anything! . 100g (1 cup) almond meal 125 g (1 cup) ...arrowroot or tapioca flour 125 ml ( cup) milk of your choice 125 ml ( cup) filtered water pinch of salt coconut oil for frying . METHOD . Combine the almond meal, arrowroot or tapioca flour, milk, water and salt in a bowl and mix well to form a smooth thin batter. (The more watery the batter, the thinner and crispier your tortillas will be, so add a splash or two more if you like.) . Melt 1 tablespoon of the coconut oil in a small non-stick frying pan over medium heat. Ladle a quarter of the batter into the pan, tilting and swirling it to coat the base in an even layer, and cook for 23 minutes, then CARFULLY turn the tortilla over with a spatula and cook for a further 2 minutes, or until golden and cooked through. Lift the tortilla from the pan and set aside, wrapped in a clean tea towel to keep warm. . Repeat with the remaining mixture, greasing the pan with a little more coconut oil in between tortillas to make sure they dont stick to the pan. . 02.01.2022 This Apple Crumble is not only delicious, it is also Sweetner Free, Paleo & Vegan! Great for dessert or breakfast. I added a few tablespoons to my porridge and it took it to another level Recipe... 4 large apples peeled, cored and cubed 1 cup desiccated coconut 1 cup almonds chopped 1/3 cup almond meal 1/3 cup melted coconut oil or butter 1 tsp. 100% vanilla extract 1tsp. cinnamon Pinch of salt Method: 1. Preheat oven to 180C. 2. Place the apple cubes in a baking dish & sprinkle with cinnamon. 3. In a bowl, place the rest of the ingredients and mix until combined 4. Sprinkle the crumble mix over the apples evenly and place in the oven for 10-15 minutes. 5. Cover with foil and place back in the oven for a further 35-45 minutes. 6. Enjoy! Take a moment to be kind to yourself and fill your cup with extra sparkle whilst thinking of those women of all ages who do not have the same opportunities as yourself. Having lived a good portion of my life in Latin America, I can truly say that we have a lot to be grateful for here in Australia. But until all women and girls are treated with respect and equally as men, we should all take responsibil...ity for educating boys & girls and ensure that we are role models for them. @mollycostelloart
