Blanche in boiling water for a few minutes, drain & then refresh in cold water. Use chopped iceberg or cos lettuce as a base, add your greens plus herbs. Mint, dill, flat leaf parsley. Add some feta or goats cheese too. ... Make a dressing with olive oil, lemon juice, lemon zest, salt & pepper.

If you’re hosting an event in your home you’re now allowed 50 guests IF you can utilise an outdoor space as well, eg backyard. 30 guests are allowed IF no outdoor space available....
