21.01.2022 pan fried goat cheese + lemon zest + ricotta zucchini flowers ingredients 8-10 zucchini flowers... 200g paesanella ricotta 100g goat cheese 1 egg 2 tbsp chopped mint 1 lemon, zested nutmeg, 1 pinch salt and pepper to taste batter 1 cup plain flour 1 cup soda water 1 tsp baking powder toppings drizzled honey sea salt lemon juice method for the filling, combine all ingredients with a fork until smooth transfer to a piping bag and pipe the mixture into the zucchini flowers, sealing at the top with any over hanging leaves allow to cool in the fridge whilst making the batter for the batter, add flour, baking powder and a pinch of salt to a bowl. pour in the soda water and whisk until just combined dip zucchini flowers into the batter and pan fry in an inch of oil for 5-7 minutes until golden on each side drizzle with honey, sea salt and a squeeze of lemon

14.01.2022 COCONUT CAKE it might not be summer just yet but it’s the next best thing, SPRING! soo I was in the mood to trial a new cake recipe (obviously, any excuse) and lemme say this could just as well be the best yet... coconut butter cake + lemon coconut cream frosting + toasted coconut + rose petals tastes like that Caribbean holiday that won’t be happening this year

12.01.2022 veal marsala ingredients 1/4 cup plain flour... 4 thin slices of veal 2 small shallots, finely sliced 3 cloves garlic, crushed 10 cup mushrooms, sliced 3 tbsp parsley, chopped 1 tbsp thyme, finely chopped 1 tbsp rosemary, finely chopped 3/4 cup cream 3/4 cup Marsala wine 3/4 cup beef stock 2 tbsp butter salt and pepper method coat veal in flour, salt, pepper. pan fry in olive oil for 25-30 seconds per side, you want a little bit of colour but don’t want to overcook the veal. cover in foil and set aside sauté shallots, garlic and mushrooms in 1 tbsp of butter and splash of olive oil until golden add marsala wine and cook down until syrupy pour in beef stock, thyme and rosemary and simmer for a further 5 minutes turn down the heat, add cream and cook until slightly thickened. season well with salt and pepper and finish with 1 tbsp of butter return veal to the sauce to heat through then scatter with chopped parsley serve with potatoes and sautéed green beans for more recipes head to www.adashofwyn.com @adashofwyn

02.01.2022 gorgeous grainy goodness ingredients 2 cups pumpkin, cut into inch cubes... 1 tbsp honey 2 tsp cinnamon pinch of sea salt 1 cup cooked freekeh 1/2 cup cooked tri coloured quinoa 1/4 cup chopped mint 1/2 cup toasted slivered almonds 1/4 cup chopped pistachios 2 tbsp dried or fresh pomegranate seeds 2 cubes Meredith goat cheese, crumbled squeeze of lemon juice, to serve method preheat oven to 180 degrees combine pumpkin, cinnamon, honey, sea salt, a drizzle of olive oil then transfer to a baking tray roast for 40 minutes or until pumpkin is soft allow the pumpkin to cool before tossing it through the grains add mint and nuts and top with pomegranate seeds, goat cheese and a squeeze of lemon juice follow me on Instagram @adashofwyn for more recipes
