20.01.2022 From @TheCookingseal (at insta) ABC Melbourne ROASTED CAULIFLOWER SALAD (from Vegan One Pot Wonders by Jessica Prescott) For the dressing:... cup olive oil cup apple cider vinegar 2 tbsp maple syrup 2 tsp wholegrain mustard 1 garlic clove, finely chopped Put ingredients into a jar and shake together. Set aside. For the salad: I whole cauliflower broken into bite size florets. Chop up the stalk too Olive oil 1 tsp salt t tsp ground cumin 400g tin lentils rinsed and drained a few handfuls baby spinach or rocket handful of currents handful of baby capers handful of tasted flaked almonds handful of chopped pistachios coriander if you like it Coat the cauliflower in the oil, salt and cumin and lay evenly across a baking tray, then place in preheated 190 degree oven for 20 minutes or until edges of the florets are slightly blackened. When cooked, remove from the oven and allow to cool for 10 minutes then add the lentils, spinach or rocket, currents, capers, toasted almonds, chopped pistachios and fresh coriander. Drizzle with dressing, toss and eat.

14.01.2022 Babu Ji NYC Aloo Gobi serves 4-6 1 large head of cauliflower, cut into medium florets4-6 fingerling (or any standard potato like yukon gold) peeled and cubed same size as cauliflower florets 1 t turmeric... 3 T vegetable oil 1 large onion, diced salt to taste* 5 garlic cloves, finely chopped* thumb-sized piece of ginger, peeled and finely chopped *Above ginger and garlic can be substituted with a ginger/garlic paste from 3 tomatoes, diced **1 t garam masala **1/2 t cumin powder **1/2 t coriander powder **chili powder to taste **Above four ingredients can be substituted with any grocery store bought garam masala Garnish suggestions: Yoghurt coriander springs ginger, peeled and julienned In a large saucepan, bring salted water to a boil Add cauliflower, potato and turmeric Cook until just tender and drain, about 10 minutes in a sauté pan, heat oil over medium heat, add onion, garlic, ginger and salt. Sauté until onion is translucent, about five minutes. Add tomato, garam masala, cumin, coriander and chili. Add boiled potato and cauliflower and mix, coating them with the curry paste (tadka) Add salt to taste Cook for three to five more minutes, adding a cup of water, bit by bit, to create and maintain a paste. Optional: Serve topped with toasted pine nuts, raisins, fresh coriander, fresh julienned ginger and/or a side of yoghurt.

INSTRUCTIONS WHIZZ UP EVERYTHING IN THE FOOD PROCESSOR OR BLENDER UNTIL IT HAS A HUMMUS-LIKE CONSISTENCY HAVE ON IT’S OWN, OR AS A DIP.SO TASTY AND ESPECIALLY DELICIOUS WITH NEW SEASON GARLIC

I kg small red potatoes 1 large avocado 2 teaspoons fresh lemon juice 1 tablespoon Dijon mustard teaspoon smoked paprika teaspoon sea salt 1 teaspoons maple syrup Freshly ground black pepper cup fresh dill chopped bunch green onions (green part), sliced 3 stalks celery, trimmed and sliced white onion, diced INSTRUCTIONS Wash the potatoes and cut out any bad spots or eyes. Steam gently for about 10 minutes, until just fork tender through the centre. Immediately run under cold water to prevent further cooking. For best results, refrigerate the cooked potatoes for about an hour. (This ensures they don’t fall apart when slicing.) Quarter the potatoes and peel if desired. Place in a large bowl. Peel and mash the avocado in a small bowl. Add the lemon juice, mustard, paprika, salt, and maple syrup And stir into the avocado to create a dressing. Season with pepper to taste. Add the dill, spring onion, celery, onion, and avocado dressing to the potatoes. Toss gently until everything is coated. Check seasoning and enjoy!

03.01.2022 From @theCookingSeal ( Insta) ABC Melbourne SOBA SALAD From A Year of Simple Family Food by Julia Busuttil Nishimura... 300g frozen edmame beans handful of greens such as mizuna, mustard greens or rocket 400g soba noodles Ginger-sesame dressing 3 tbsp soy sauce 2 tbsp mirin 2 tbsp rice wine vinegar 2 tbsp tahini 2 tbsp sesam oil 2 cm piece of ginger, finely grated 1 tsp caster sugar sea salt To serve Shredded nori Toasted black and white sesame seeds Shichimi togarashi Finely sliced spring onion Blanch the edamame in saucepan of boiling water over high heat for a couple of minutes. Remove with slotted spoon. Don’t drain the pan as you will use the water to cook the noodles. Rinse with cold water to stop cooking. Drain, then place in a large bowl, along with the greens. Add the soba noodles to the pan and cook to al dente, according to the packet instructions should be around 6 mins. Drain and rinse under cold running water. Leave to drain for a couple of minutes, then add to the edamame and greens. Meanwhile, place all ingredients for the dressing in a small bowl and whisk. Season to taste and pour over the noodle mixture. Toss until the noodles are well coated. Divide among bowls and top with the nori, sesame seeds, shichimi togarashi and spring onion.
