24.01.2022 Pecan Pie processed sugar-free Ingredients... Pastry 150g blanched almond meal * 1 egg pinch salt *1 Tbsp honey 15g butter Filling * 100g dried dates (pitted) 150g butter * 100g honey pinch salt * 3 eggs * 180g raw pecans *Available from Just The Freshest Method Pastry 1. Place almond meal, salt, and butter in a food processor and process till fine crumbs form. 2. Add egg and honey until forms a dough consistency. Cover and refrigerate for 30 minutes. 3. Preheat the oven to 180 and grease a 20cm pie dish. 4. Roll out dough between two sheets of baking paper till it will fill your pie dish. Remove the top sheet of baking paper and turn the pastry over and fit it into the dish. 5. Bake in a moderate oven for 10 minutes or barely golden. Filling 6. Chop dates finely in a food processor or by hand 7. Place dates into a saucepan on low heat. Add butter, honey, and salt. Cook, stirring, until butter melts. 8. Pour mixture into a mixing bowl and whisk in eggs, until creamy. 9. Fill pastry shell with pecans and then pour the mixture over the top, bringing over the edges at the top if possible. 10. Cut alfoil into strips and place over the pastry to prevent it from burning. 11. Bake in a moderate oven for 25 minutes OR until golden brown and set in the centre. 12. Serve warm or cold with ice cream and/or cream
