25.01.2022 well 600 jars in one room 90 salamis hanging on one rack 200 bottles of fruit juic in another room and a couple of piles of another hundred or so jars of tucker.. slowly getting my recources organised and filling my pantry with food to do us for the next year..
24.01.2022 so folks often ask me how we raise our birds so here is the picture story. there are baby chics in the first brooder there are 4 week old chicks in the second b...rooder and they will be relocated to the freezer at 9 weeks of age then there are the ducks in the new breeding yard. the are the biggest we have raised for their age the fastest weight gain for their age so they get to hang around for a while to see we can produce bigger faster growing meat ducks and there is the fattening yard and those guys are all destined for the freezer at 16 weeks. the aim now is to produce a bigger faster growing bird in 14 weeks to lower the food bill but thats another story. then there is the main breeding yard with lots of nesting boxes for our ducks to raise more ducks which will go into the brooder shed soon as they hatch and so the cycle continues. the diet is a mix of commercial pellets grains and greens and bread and fruit.. the yards are topped off with wood shavings to help us keep them clean and easy to clean out. the waste goes into compost and then onto the fruit trees. 23.01.2022 well what can i say a little creativity and 15 chooks turned into a stack of meals so heres the run down we got smoked hot wings smoked mary lands and smoked sausages and chicken hams not finished yet and creamy chicken soup
23.01.2022 so you start off with some turkey marylands and soak them in brine for a day then you hang them up in your meat fridge to dry for a day or 3 and then they go into the smoker for 4 hours. now you have turkey hams bone in.. when you slice them up you have turkey ham ready to go into a sandie but if you throw those slices into a fry pan well in about 3 minutes you have turkey bacon..
20.01.2022 so here goes nothing.. the start of our danish duck salami.. will know in a couple of weeks if its worked or not.. exciting stuff as my ducks are all starting to hatch now.

20.01.2022 metwurst is now cooked chorizo and salami hanging in my curing fridge.. so tomorrow i get to smoke the bbq ribs
19.01.2022 so it looks like ham it slices like ham it has a ham texture and it eats like ham.. if you didnt know it was chicken you would swear it was ham
18.01.2022 packed 20 litres of olives ... should go well with our home made hams and salamis.. i think my wog ancestors have smiled on me the earth mother has for sure.
14.01.2022 mnmn chorizos cooked and metwurst cooked and now the hams are in the smoker
11.01.2022 well the new gas smoker is assembled and ready for a road test tomorrow and the commercial drinks fridge we purchased has been programmed to the optimum temp for curing salami and hams.. yup chicken hams duck hams salamis on the way..
11.01.2022 so home made chicken snags with home made tata salad and home made coleslaw.. doesnt get any better than this
09.01.2022 we now growing our chickens out for an extra week so we got 3.8 kilo chooks and when we made the hams we spiced them and added honey then rolled them over and tied them before hot smoking for 100 minutes. they were brined first and the texture is same as ham the mouth feel is just like pork ham and flavour is wicked. a little more spicey than the hams we made with the mary lands.
08.01.2022 my first hams. brined for a week hung for a week smoked for 6 hours and slow cooked for in total for 14 hours. looks like baked ham tastes like baked ham has the mouth feel of baked ham and lightly salty.. i have only one thing to say FIGJAM
07.01.2022 this mornings brekky home made turkey bacon and fresh free range eggs on half a toasted roll..
06.01.2022 chicken and duck hams now hanging in the fridge.. 30 days hangin for the duck and 3 days for the chicken then into the smoker for finishing ..
03.01.2022 my new jar room. racks can hold a thousand jars of food and 500 empty jars . i have a bench in there for handling jars for labeling and packing for the local markets.
