22.01.2022 Perfect dish for a rainy Sydney Sunday. Chicken, potato & chickpea stew, Indian-style, for a stick-to-your-ribs, nourishing comfort meal. Recipe... Rub skinned chicken drumsticks with turmeric & salt and set aside. Fry some garlic, onions & ginger in olive oil. Add canned or fresh chopped tomatoes/tomato puree and powdered spices of your choice (turmeric, chilli, coriander, cumin, curry, garam masala etc), cook for a few minutes. Add chicken drumsticks and potato chunks with some more salt and cook in a slow cooker/on the cooktop/in the oven or in a pressure cooker which is my preferred method till the chicken is tender. Add canned chickpeas & cook a while longer. Serve warm. #delicious #comfortfood #stew #simplefood

19.01.2022 Made chicken Fajitas for dinner last night. Build-them-yourself kinda meals always make for a fun family dinner, plus kids especially love being able to choose their own fillings and toppings. The leftovers are great for lunches + lunchboxes! For the Fajitas : - Rub sliced chicken thigh fillets with cumin powder, coriander powder, smoked paprika, salt and oil (chilli powder optional) for about 30 minutes. - Stirfry or chargrill the fillets.... - Stirfry sliced red onions and green/red/ yellow capsicum till softened and slightly caramalised. 16.01.2022 A dish I used to make all the time, but haven’t made in a while. Shanghai pork noodles. It is adapted from a recipe I found in a @deliciousaus magazine years ago. I’ve used lean pork mince, but you can use turkey, chicken on beef mince. Bonus, anything with mince and noodles is always a hit with the kids. ... Recipe (Serves 4) Ingredients 2 tbsp olive oil 1/2 cup onion chopped finely 1 tbsp garlic finely chopped 1/2 tbsp ginger finely grated 3/4 cup green beans chopped 3/4 cup carrots chopped finely 500 gms lean pork mince 2 & 1/2 tbsp soy sauce 2 tbsp Chinese black vinegar 2 tsp roasted sesame oil 1 & 1/2 tsp sugar 3 cups egg noodles cooked Some chilli flakes and chopped spring onion greens Method 1. Heat the oil in a wide pan on medium high heat. 2. Fry the onion, garlic and ginger till translucent, approximately 2-3 minutes. Keep stirring to make sure they don’t burn. 3. Add the beans and carrots and fry till the vegetables are just tender. Keep stirring the whole time. 4. Add the mince, stir to combine, breaking it up as you stir. Stir-fry the mixture till the mince is cooked through -approximately 5-7 minutes. 5. Add all the sauces and sugar. Cook for a minute. 6. Add the noodles and stir well to combine. 7. Cook till warmed through. Divide into bowls and add the chilli flakes and chopped spring onion greens. 15.01.2022 Made Biryani after a long time! Traditionally it is made with goat’s meat, but since it’s not easy to find mutton around here, made it with chicken instead. Biryani is a dish made with marinated spiced meat & Basmati rice slow-cooked together in a sealed earthen pot. It is believed to have originated in Persia and brought to the Indian sub-continent by the Mughals. This is my home-made simplified version : Marinate the chicken in yoghurt, ginger, garlic & spices overnight. P...arboil the rice with whole spices. Partly cook the marinated chicken on the cooktop. Layer the chicken, herbs, fried shallots & rice in a pan/pot and finish cooking on the cooktop or in a preheated oven. 13.01.2022 Tempered semolina ‘Dhokla’. Dhokla is a fermented, steamed, savoury and sour cake from Gujarat in India. Traditionally it is made with rice and lentils fermented, ground and steamed. This is an easy Semolina version and is based on a recipe my mum sent me. Fine semolina combined with yoghurt, baking soda, salt, oil, grated ginger & crushed green chillies, steamed in a steamer and then tempered with oil, mustard seeds, asfoetida, curry leaves and green chillies.... I’ve used canned chickpeas, fresh tomatoes and black olives and a mix of different spices. This dish can be served as a dip with toasted pitta crisps, as a side dish to roast or grilled lamb or for an unusual breakfast, serve warm with poached or fried eggs.... 12.01.2022 Making a new batch of ground coriander & cumin spice mix called ‘Dhana-Jeeru’ in Gujarati. It is possibly the most quintessential spice mix in Gujarati food. It works really well as a spice rub with smoked paprika or turmeric. I use this spice blend in Mexican and Middle Eastern dishes as well. For a deliciously fragrant blend, combine coriander and cumin seeds in 2:1 ratio and dry roast in a pan on medium heat till the seeds appear golden brown in colour. Keep stirring so t...hat the mixture doesn’t burn. Allow to cool for a couple of minutes. Crush in a coffee/spice grinder into a fine powder. Store the spice mix in an airtight container. 11.01.2022 Beautiful day for a coastal walk in Sydney today. In the past year, juggling work, kids etc has meant little time for long walks. As a result my cardiovascular fitness seems to have fallen by the wayside. In the meanwhile, I have been loving doing a combination of Pilates and Yoga (‘Yogalates’ ) which has been great for strengthening, improving flexibility and reducing stress. However, that has meant even lesser time and energy for cardio! ... Apart from weight loss, cardiovascular fitness is essential for a healthy heart and may help prevent/manage many cardiovascular health conditions. Walking is the simplest form of cardio (bonus Vitamin D ), although a stroll won’t cut it. It has to be at a brisk pace. Adding, brief sprint spurts, hills and stairs/steps further help increase the heart rate. Always stretch before and after your walk. Current intention : Improve my cardiovascular fitness one walk at a time. A few ingredients, a little time, toss through some pasta and cherry tomatoes and a delicious meal is ready in less than an hour plus the kids love it! This is my take on a classic. Recipe... 3-4 cups basil leaves 1/4 cup extra virgin olive oil 3 cloves garlic 3 tablespoons pine nuts 3 tablespoons freshly grated Parmesan Salt & pepper to taste Blitz the garlic, pine nuts and olive oil. Add the basil leaves and Parmesan. Blend into a smooth paste. Season with salt & pepper. A mortar and pestle yields a much better result. 09.01.2022 Calamari 3 ways with fennel, orange & pine nuts salad. Usually I make calamari marinated in garlic, salt, chilli & lemon juice & then pan-fried. There was a request for crumbed calamari this time and since I’m not keen on deep frying anything , tried baked calamari 2 ways. ... 1. Toss the calamari rings in a little olive oil. Coat with Panko breadcrumbs. Sprinkle some salt & pepper and bake in a preheated oven for 15-20 minutes. Turn the grill on for the last few minutes to crisp. 2. Dust the calamari rings with some flour, dip in beaten egg, toss in seasoned breadcrumbs. Drizzle with a little oil and bake in the oven for 15-20 minutes. Turn the grill on in the last few minutes to crisp. 07.01.2022 Lamb shanks cooked in a deeply fragrant and mellow curry with flavors of dry-roasted coconut, sesame seeds, ground & fresh coriander, ground cumin and chilli in a caramalised onion-ginger-garlic base. This curry is inspired by the fresh flavours of the Konkan coast of India and reminds me of my early childhood. The subtle use of spices and coconut in all its forms characterizes the food of this region. I grew up eating goat mutton curry in India and lamb is bit of a fore...ign taste to me, so I rarely eat lamb unless it is in a spicy curry like this one. Delicious for breakfast with yoghurt and fresh fruit or even just as a snack. Wholegrain rolled oats combined with coconut flakes, nuts, seeds, dried berries and maple syrup and roasted till it is deliciously browned! Dark chocolate chips or chunks are a delicious extra! 03.01.2022 Every now and then I get a real craving for tofu. Love it in all forms : firm, soft, silken etc. I could snack on marinated tofu all day. Also tastes delicious in a stir-fry, curry or in a rice bowl like this one. Japanese marinated tofu (non GMO), wholegrain Basmati rice, steamed broccolini + sugar snap peas & pan-fried brussel sprouts, dressed with soy sauce, Chinese black vinegar, sesame oil and grated ginger. 03.01.2022 NUT-FREE CACAO MUESLI BARS for school lunchboxes. These muesli bars are high in fiber and protein, guaranteed to keep little tummies fuller for longer. My go-to snack would ideally be nuts or a nut bar, but for a nut-free lunchbox, these are ideal. Recipe... 1 cup dates 2/3 cup cranberries 1/3 cup sesame seeds 1 tbsp cacao powder 1/3 cup protein powder 1/3 cup rolled oats 1/4 cup cacao nibs or dark chocolate chips. Process the dates, cranberries, sesame seeds, cacao and protein powder into a paste. Tip the mixture into a bowl, add the rolled oats and dark choc chips or cocoa nibs and combine well. Press the mixture in a rectangular or square tin and put in the fridge to chill for a few hours. Cut into rectangular pieces. (For a nutty option, add 1/2 cup of chopped nuts. High in protein, fiber, complex carbs, good fats and veggies, this bread is delicious grilled with olive oil, spread with avocado or topped with a fried egg and makes for a very filling breakfast! 01.01.2022 Vietnamese chicken salad would have to be one of my favourite summer salads - fresh, vibrant, piquant and crunchy! The original recipe was adapted from Nigella Lawson’s ‘Nigella Bites’ cookbook, which then evolved over time. The best tip from her recipe was to soak the sliced onions in the sour dressing. This takes the edge off the onions and makes them more mellow. (PS I use this tip whenever raw onions are called upon in a salad/salsa etc.) I like to use chicken cooked on t...he bone for maximum flavour, but you can use poached chicken thigh or breast fillets or for a quick meal - store bought cooked chicken works well too. The roasted cashews and crispy shallots take the crunch to another level! Like most South-East Asian dishes, the secret is in the balance of flavours - hot, sour, salty & sweet.
