17.01.2022 Who hates wasting vegetables at the end of the week? One of our new goals is to really crack down on the food we waste. So tonight, I had chicken mince in the fridge and have decided to whip up a Chicken Bolognese Sauce... is there such a thing? Well there is now :) It incorporates all those veggies that were left sitting in the fridge... totally came up with my own recipe. Hoping it tastes ok I know Trent will tell me if it doesn't. But I have no doubt it will be delicious!

11.01.2022 Doesn’t look amazing was so deliciously tasty!!! We Cooked the skinny mixers puttanesca sauce and made it into a mediterranean lasagne with eggplant, zucchini and mushrooms!!!! Soooo tasty! Definitely making again

09.01.2022 Today in the thermie I whipped up these rissoles, packed full of veg. We had zucchini, eggplant & mushrooms frozen in the fridge (I refuse to waste fresh fruit & veg), and we added capsicum, onion & carrot. Veggies as a side dish, and it’s the perfect Friday night dinner

02.01.2022 Sometimes plain veggies don’t cut it! So tonight with our chicken we had this veggie gratin... all I did was pop some onion, garlic and carrot in the thermie, blitzed speed 5 for 5 seconds. Scraped down bowl, added a little butter, and cooked for 2 minutes, 100 degrees, reverse speed 1. Then added all the veggies (cut up potato, broccoli and cauliflower) along with 100g sour cream, one cube of veggie stock, salt, pepper, mixed herbs and cooked for 15 minutes, 100 degrees, reverse spoon speed! And then popped it in all the baking dish, grated some cheese and topped with bread crumbs, and popped in oven for forty minutes and done!!! So easy. And can mix and match with any veggies you have the in the fridge
