15.01.2022 Titillating Tuesday eats: Protein Lemon Poppy Seed Muffins Ingredients: 2 Scoops International 'Superior Whey' or 'Synergy 5' 1/2 cup and two tbsp coconut flour (56g)... 3/4 tsp baking powder 3/4 tsp baking soda 1/4 tsp salt 1 tbsp of poppy seeds 1 tbsp lemon lemon zest 1 tbsp coconut oil 1 large egg 1 tsp vanilla extract 1/4 cup of plain no fat Greek yogurt 1/4 cup of granulated stevia 2 tbsp freshly squeezed lemon juice 1/2 cup of unsweetened coconut milk Method: 1. Preheat the oven to 180 degrees Celsius and lightly coat a muffin tray with nonstick cooking spray. 2. Combine the coconut flour, baking powder, baking soda, salt, poppy seeds and lemon zest. 3. In a separate bowl, combine the coconut oil, egg and the vanilla, then mix in the Greek yogurt, stevia, lemon juice, coconut milk and protein powder. 4. Combine both mixtures until a smooth batter consistency forms. 5. Spoon the batter evenly into the muffin tray. 6. Bake at 180 degrees for 15-20 minutes or until a skewer inserted into the centre comes out clean.
