24.01.2022 Well, my 1st Apple Pie ever!! Took 2 goes to get a pastry I was happy with, still may need a little tweaking APPLE PIE... What you need: PASTRY 2 1/2 cups plain flour 3 Tbs sugar 1 cup of cold butter 3 Tbs of ice cold water 1/4 Ts of salt In a bowl, add dry ingredients, mix with a fork. Add your butter and with your hands, mix through till crumbly, adding a water a tablespoon at a time. Once pastry has come together, tip onto a floured surface and roll into a ball, cover and refrigerate while making filling. FILLING 5 Granny Smith apples, peeled, cored and diced 3/4 cup brown sugar 3 Tbs of plain flour 2 Ts of cinnamon (or YIAH Apple spice Blend) 2 Tbs butter In a bowl, add all ingredients except butter, mix with hands to coat the apple pieces. Take pastry out, roll on a floured surface to a 1/4 inch thick, place in pie tin. Cut off excess pastry and re-roll, cut strips and crimp with fork. Pour filling in and spread out, place cubes of butter over filling than place pastry strips in any pattern you like...or not at all. Brush some melted butter on top and sprinkle with sugar. Cook in pre-heated oven 180 for about 40 minutes or until golden.

21.01.2022 What do you do when your friend gives you a 15kg pumpkin (it could actually have been heavier) Roasted Pumpkin Soup Queensland Blue pumpkin ... Honey Cumin 1 large onion - peeled quartered 2 carrots- peeled and chopped 3 potatoes - peeled and chopped small 5 cups chicken stock Peel and Cut the pumpkin into wedges, place on a lined baking tesy, sprinkle over olive oil, cumin and honey. Bake on 200 for about 30 minutes, than carefully flip and bake another 30 minutes. I also baked the onions f o r 30 minutes. Pop the potatoes and carrots into a large pot with the stock. Once pumpkin and onion is cooked, add to stock, allow potato to cook down, blend and serve!!



16.01.2022 Lamb Shanks Camp oven and Dutch oven versions What you need:... 4 Lamb Shanks 1 onion finely diced 2 large carrots finely diced 2 celery stalks finely diced 3 Tbs minced garlic 2 1/2 cups cab sav or a cheap red wine 500ml chicken stock 1 Tbs thyme 2 tins of diced tomatoes 2 bay leaves Salt and pepper Brown off your shanks Heat your camp oven ( or Dutch oven @180), brown off onion and garlic for 2 minutes and add carrot and celery, stir for 5 minutes(You can use your Dutch oven on stove top) Chuck other ingredients in, place in shanks, lid back on and cover/surround with coals(or in oven at 180 for2hours)) Check after an hour, replace coals. After the 2nd hour, replace coals, leave lid off for 30 minutes (if cooking in oven, lid off for 30 minutes also) Put lid back on, top with coals and go another 1.5 hours (if using oven and lamb doesn't pull apart with 2 forks, lid back on for 1 hour) Once shanks are cooked, put sauce through a sieve, push those Vegies through. Extra sauce can be frozen Serve with mash and damper

16.01.2022 And sometimes it's the simple things... Easy Omelette Mushrooms... Spinach 3 Eggs beaten Garlic Butter Cherry tomatoes In a pan melt 1 Tbs butter and 1 Tbs minced garlic add mushrooms and cook till soft. Add the spinach, let it wilt slightly. Melt 1 tablespoon of butter and pour into egg mix than pour over mushroom mix, season with salt and pepper. Gently mix it all together but not scramble it. Place tomatoes on top Cover, let it fry for about 3 minutes, loosen edges and flip...cook another 2-3 minutes Whola!!



15.01.2022 Sunday Brunch Keeping it simple...and using leftovers from pizzas last night Omelette... 3 Eggs per omelette Mushrooms -sliced Capsicums - diced Tomato - diced Shredded ham Grated cheese Salt and pepper You can use YIAH lime cracked pepper, porcini salt and county onions and chives Salute mushrooms, capsicum and tomato- set aside. In a bowl add eggs and season with salt/pepper and roughly mix with a fork. In a medium pan over med-high heat, melt a teaspoon of butter, cover pan. Pour in egg, swirl till it starts forming, lift edges. Once almost Cooke, cover half with your filling, flip the other sideover and cook till cheese melts

13.01.2022 Looking the goods!!! My Tip Marinate your Roast, wrap in plastic and refrigerate several hours before cooking (or over night)... I use Minced garlic mixed with Tyme, I rub it all the over and cuts slits in lamb and push it in. Than rub with some olive oil and finally....Brown Sugar...Trust me....it works!!!!

06.01.2022 Just in time for Anzac Day Anzac Caramel Cheescake with golden syrup sauce INGREDIENTS... BISCUIT BASE: 2 1/2 cups traditional rolled oats 3/4 cup plain flour 1/3 cup desiccated coconut 75g butter 1/4 cup golden syrup 1/3 cup brown sugar FILLING: 500g softened cream cheese 1 tin condensed milk 1 Tbs lemon juice 1 Tbs gelatin dissolved in 1/4 cup water 1 tin Caramel Top n Fill GOLDEN SYRUP CARAMEL - OPTIONAL 60g butter 1/4 cup brown sugar 1/3 cup golden syrup 2 tablespoons thickened cream Preheat oven to 160C/130C fan-forced. Grease and line the base of a 20-23cm-round (base) springform pan. 2. Combine rolled oats, flour and coconut in a bowl. Place butter, golden syrup and brown sugar in a small saucepan over medium heat. Cook, stirring, for 5 minutes or until melted and smooth. Add butter mixture to coconut mixture. Mix well to combine. Stand for 5 minutes. Reserve 1 cup of mixture to bake mini Anzacs.Press remaining mixture over base and side of prepared pan, leaving a 1cm border around top edge of pan. Blind bake for 30 minutes, let cool. In a large bowl using electric mixer, mix cream cheese, condensed milk and lemon juice till smooth, fold in gelatin and swirl caramel through, pour in base and set in fridge. Golden syrup caramel: Place butter, brown sugar and golden syrup in a small saucepan over medium heat. Cook, stirring for 5 minutes or until smooth. Stir in cream. Bring to the boil. Simmer for 2 minutes. Remove from heat. Cool for 20 minutes. Transfer to a bowl. Cover. Refrigerate overnight or until thick, pour over cheesecake. I decorated top with a mixture of whipped cream and caramel and mini Anzacs. Anzacs are 1/2 teaspoon of mix, rolled, slightly flattened, baked on 170 for 12-15minutes

05.01.2022 Cold winters night= Cob loaf Cheese and Bacon Cob loaf What You need:... 1 cob loaf 250g cream cheese 300ml cream 2 cups shredded Mozzarella cheese 1 cup shredded tasty cheese Tablespoon of chives 250g diced bacon 1 onion diced Cut lid off cob loaf and pull out the soft centre bread into pieces, set aside. Fry off onion and Bacon. Place in a bowl with all ingredients and mix well. Pop in the cob loaf, put lid on, cover in foil and bake in 180 oven for 40nminutes. Remove foil and lid and bake another 10 minutes. Place bread pieces on tray around cob loaf and bake a final 7 minutes.

05.01.2022 Pasta Sauce on the go.. But a Kiddie Friendly rice while we wait (not a fan of peas but weirdly, my daughter requested them) I first have to give credit to Renee Chambeyron for the cooking tip on making the PERFECT rice...and it is bloody perfect!!... Simple Rice WHAT YOU NEED: 2 Tbs Vegetable oil (YIAH oil of choice) 2 cups white long rice 3 Tsp of Chicken Stock 3 Cups boiling water 3 Eggs beaten 400g Diced bacon 1 cup of peas 2 Tsp minced garlic 1 Tsp minced ginger 3 Tsp of Soy Sauce I also added left over roast pork but you can add any veg or protein your heart desires. In a pot, over high heat, add oil and uncooked rice. Stir, coating the grains and continue till you see grains turning a solid white colour. Stir in the chicken stock, again coating grains and continue till it's a brownish colour(not burnt). Add the water but be careful, it will steam like crazy!!! Stir through, still over high heat and continue till the water /rice ratio is the same. Pop the lid on, turn heat down to low and let the rice absorb, takes about 15 minutes, stir a few times so it doesn't stick. I than fried off my bacon in the ginger and garlic, added to rice. Scrambled me eggs and fried like pancakes, roll up, slice and d ice, add to rice along with peas. Finally added soy sauce and whola!!!

04.01.2022 Soooo, this year we decided to plant a vegie patch and now have an abundance of tomatoes!!! Stay tuned peeps.... I'm experimenting with a slow cooker pasta sauce (That's freezable) Slow cooker Marina Sauce ... INGREDIENTS 2 x 400gm cans crushed tomatoes (I used 8 cups fresh tomatoes) 170gm tomato paste 1 medium onion diced 1 heaped Tbsp garlic, minced 2 whole bay leaves 1 Tbsp dried basil 1/2 Tbsp dried oregano 1 Tbsp brown sugar 1 Tbsp balsamic vinegar Season with salt (YIAH Greek Tavena or any other Italian herb could be used) Chuck them all in your Slow cooker, cook on low for 8hrs. Once it's a rich deep colour, sugars have caramelized and it's good to go... salt and pepper to taste I freeze in zip lock bags

Spaghetti Carbonara WHAT YOU NEED:... 500g pkt spaghetti 4 large large eggs 1 cup freshly grated Parmesan 8 slices bacon, diced 1 1/2 Tbs minced garlic salt and pepper, to taste 2 tablespoons chopped fresh parsley leaves (optional) In a large pot of boiling salted water, cook spaghetti for approximately 10-12 minutes ; reserve 1/2 cup water and drain well, drizzle a little olive oil over, stirthrough so it doesn't dry out or stick. In a small bowl, whisk together eggs and Parmesan; set aside. Heat a large pan over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes, stir in garlic and fry about 1 minute. Reduce heat to low. Working quickly, stir in pasta and egg mixture, and gently toss to combine; season with salt and pepper, to taste. Add reserved pasta water, one tablespoon at a time, until desired consistency is reached. Serve immediately,with parsley, if desired and garlic bread or a said.. or BOTH

01.01.2022 It's the weekend! ! After midday and still in my pj's..oh yeah And decided its baking time. Jam doughnuts in the piemaker...why not!... Kmart pie maker doughnut recipe Servings: 12 doughnuts Ingredients 1 cup of self raising flour 2 Tbs Yiah Chocolate powder of choice (optional) cup of caster sugar cup of milk 2 eggs Vanilla essence 2 tbsp of vegetable oil 60g melted butter Filling (Nutella, jam, custard etc) In a separate bowl add 1 cup caster sugar mixed with 1 tsp cinnamon powder for coating Steps Put self raising flour, choc powder, melted butter and caster sugar In mixing bowl In a separate jug, add milk, eggs and vanilla essence and vegetable oil Pour mixture into flour mix and whisk until combined Heat up the pie maker and spoon in mixture until it’s just below full Gently dollop in the teaspoon of filling into the centre of the doughnut mix Close the lid and cook for 8-10 minutes Remove doughnut and brush all over with butter and toss through the sugar and cinnamon mixture
