21.01.2022 Meet the team! This week - our Master of the kitchen, Head Chef Denis Grothe... How did he end up at The Arc Of Iris? Denis has worked as a chef since he was 1...6, and held head chef positions in big restaurants throughout Germany since the age of 22. He spent 6 years working in Hamburg, where he lead big kitchens and was hired to organise and run kitchens in newly opening restaurants. This was followed by a few seasons on an island in the north of Germany, that was similar to Margaret River where in summer it was full of tourists and in winter it was empty so Denis travelled (and worked) internationally. This is how he ended up in Australia. In February 2012 a friend informed him of a job in Margaret River, and the next day Denis was in the @europeanfoods_au in Northbridge for an interview with the owner of the Arc Of Iris. A week later he was cooking in the restaurant, two months after that he got offered a sponsorship, and by December that same year Denis and wife Carina were permanent residents. Originally he had not planned to stay in Australia, but once he started working in Margaret River the decision was easily made. Denis has been head chef of the Arc ever since. He says it's different to the big kitchens that he used to work in, but he loves it here. "It's hard but honest work, the quality of local produce, being in Margaret River and a member of this community, what more could I ask for...plus, the team has never been this good!" Denis says that Sous Chef Giovanna is the best support any Head Chef could imagine for. "For all of us the Arc is like our second home and we treat each other like family. I am really proud to work in this little ‘gem’, as people call it, where locals have been coming for so long." What’s his favourite dish on the menu? "That is not an easy question! I am really proud of our free range pork belly from Margaret River Gourmet Meats that we serve with a crispy skin, a German style spiced red cabbage, apple sauce and baby potatoes." Also Denis says that this week's special - the 350g prime porterhouse steak with rosemary roasted potato, a greek salad and a chimichurri sauce is another stand out dish. And his favourite wine? "As a meat lover, I seek full bodied red wines and Phil Potter from After Hours Wine does an awesome job with his Shiraz, that fits perfectly to any meat dish on our menu.
