24.01.2022 Helping people with their mental health and improving their physical ability is the reason Im starting this challenge. Not for weight loss. Not for muscle gain.... Yes, those two things could be an outcome but this goes far beyond those things. Our mental health is more important now, than ever and exercise can help you. To see how much this program has helped people both mentally and physically during lockdown & how much stronger theyve become along the way, is just incredible - all from @ home workouts! Thank you so much @lyntontapp for jumping on and taking us through your fav zucchini & corn fritters Mine didn’t turn out asssss good as Lyntons BUT I didn’t screw it up completely so I was chuffed! SWIPE FOR THE RECIPE!... METHOD - Pre soak quinoa overnight or cook it prior. - In a bowl, mix your quinoa, grated zucchini (water removed), 3 eggs, salt, corn, corn flour and mix well to form batter. - Pre heat a pan on medium heat, add extra virgin olive oil and scoop your batter into little pancake shapes. - Cook on each side until brown (about 3-5MIN!) - Serve up Melbourne style with smashed avo, feta, radish, dill & a poached egg DEVOUR & ENJOY! Instead of spending your time scrolling or watching TV this weekend, commit to just 30 minutes of movement. Plan it out, pencil it in and get it done. Speaking of pencils!... 16.01.2022 Pop this one on your TO DO LIST for 2021! @oreillysrainforestretreat We’ve absolutely loved the Goldy so far but if you want to escape the city and head somewhere a little more tranquil - @oreillysrainforestretreat is absolute heaven.... Bush walks, wildlife shows, cabins with no TV, lodge breakfasts & dinners, amazing views, massages, evening storms ++ adventure and relaxation. Since we can’t travel OS and we’re pretty much forced to explore our country, I can’t recommend it enough! 1.4 hour drive from Gold Coast this is not sponsored too @kavalacollective

15.01.2022 Id say 50% of the reason I train is for my mental health. 30% aesthetics. and the other 20? Because it makes me feel like a fierce, strong, bad ais superwoman who can take on any challenge.... This next 6 weeks is gonna be tough, weve been thrown out of routine and have to adapt to this new normal, for a second time, just as things seemed hopeful. 13.01.2022 I’ve been more consistent this year with my training that I have been in my entire life. Usually my training ebs and flows and I’ll have week long breaks here and there or moments when I’ve dreaded my sessions but now, I can’t bloody wait for them - every single day. There have been two things this year that have kept me on track ... @liveswith_aj and my amazing community (probably because I’m taking the classes and have no other choice but to show up! ) BUT because I’ve had no choice - I’ve turned up to every single time with no regrets afterwards. And number two Locking in sessions with mates. During Covid it was on zooms but now in person and I can’t tell you how much it’s improved my desire to train, my enjoyment throughout the session AND I’ve made more mates along the way (you know who you are @lucymulcahy ) I can’t bloody wait to smash the end of 2020 and work on my strength & fitness throughout all of 2021! Buzzing and excited for what’s to come! @thefitcollective_3142

13.01.2022 OKAY so were officially 3 weeks in Melbourne.. and who the hell knows how long we have to go but what I DO KNOW IS THIS: Cases went down yesterday to under 300 which is a good sign. We might not be able to do everything we enjoy doing atm but we can still have good conversations, spend time with family, exercise, enjoy good food and sleep well with a roof over our heads. I cannot make vegetarian lasagne.... I can, however, improvise by creating a whole new recipe to save the day. T-swift new album is legit off the charts so at least you can spend the weekend learning every word to every song as you probably dont have anything else to do 3 down, (maybe) 3 to go, either way weve got this! BIG LOVE

First time around we all just got drunk and sat on our couches so MAYBE this time we can actually do those things we said we wanted to. 10.01.2022 WINTERY CURRIED PUMPKIN SOUP (2 serves) 1kg kent or butternut pumpkin 1 brown onion... @mingleseasoning curry in a hurry seasoning 200ml coconut milk 2 tspn. ground paprika & Pepper 4 big handfuls of spinach Sourdough for Dippn Greek yoghurt for doloppn.... HOW TO 1. Cut pumpkin & onion and start to cook with a dash of water in a large saucepan, stirring until onion is brown. 2. Add coconut milk & @mingleseasoning curry seasoning, reduce heat and cook until the pumpkin is soft. 3. Once soft, mash pumpkin so its chunky and stir in the spinach, until wilted. 4. Bang on your toast! Serve up your soup and add a dollop of Greek yoghurt and optional rocket to fin. 5. Go back for seconds, thirds and fourths High in vitamins, a good source of fibre & Iron, so easy and yummmmy ++ you can make a huge batch a freeze it for later. Sourdough and Greek yog a must add

05.01.2022 TRUFFLE MUSHROOM OMLETTE Feast your eyes fam. Day 4/42 brings you some breaky Inspo this morning! And my oh my was this deliiiicious! WHAT YOU WILL NEED... - Small saucepan - 2-3 eggs - 1 cup chopped mushrooms - 1 tbsp. Truffle oil - A handful or two of spinach - Chilli flakes (optional) - S & P - Toast to fin (optional). 1. Heat a saucepan on medium heat, and add the truffle oil 2. Add the mushrooms and chili flakes and sauté until nicely browned 3. Add spinach until wilted 4. Crack your eggs into a separate bowl and whisk well and then crack in some salt and pepper, stir. 5. Space out mushrooms and spinach in the pan and pour over the egg mix, reduce heat and place a lid over the omlette. 6. Allow to cook through for several minutes. 7. Once semi cooked, you may either try to flip OR allow to cook further (with lid on) until it is completely cooked through. 05.01.2022 Restricting diets that dont let you enjoy the finer things in life arent sustainable, will most likely leave you feeling frustrated and can lead to yo-yo dieting and even binge eating. Last nights dinner was unbelievable! and by no means did we hold back indulging in pasta, cocktails, wine and chocolate pudding. Guilt. Free. Today Im not restricting myself by not eating or trying to burn off all those calories with exercise. Yes I might eat a little less because Im not as... hungry but Im just back to my normal healthy eating and Ill probably have even more energy to smash out an epic training session! Balance is key. Because if we cant enjoy these finer things in life, what the hell are we living for?

01.01.2022 DAY 19/42 // A RECIPE SWEET CHILLI CHIPOTLE CHICKEN MEXICAN BOWL. & Maaaaan shes saucy!... Preheat oven to 180d C. Marinate your chicken (2 thighs) in Saracha sauce, kupi mayo and sweet chilli sauce. Chop red peppers & broccoli, drizzle with olive oil and roast for 20-25mins. Whilst veggies are roasting, chop fresh tomatoes, mushrooms and smash your avocado. Set aside toms & avo. When the veggies have about 10 mins to go, cook your chicken and mushrooms in separate pans! Until cooked through well. Plate up! Add rice or ice berg lettuce as a base. Top with roasted veggies, mushrooms, corn, chicken, avo & tomato! Top with sour cream, cheese & tortilla chips! Devour and enjoy
