When Greg from Pivot Stove & Heating catches up with his old friends, they have to do something extra special, in this case Naan Bread! The ESSE Ironheart is available here https://www.albanyecohouse.com.au/products/esse-ironheart Baker's flour - 425g... Bicarb soda - Pinch Salt - 7g Years - 21g Water - 268ml Place all ingredients in a stand mixer with a dough hook attachment and mix for about 6 minutes. Stop the mixer and check that the dough has formed a ball, that it’s smooth with no lumps. Cover and leave in a warm spot to double in size for 1 hour. Divide the dough into 9 x 80g pieces and rest for 10 minutes. Roll the dough out to 3-5mm thick and rest for a final 15 minutes. Cook straight on top of your ESSE hot plate / close the bolster lid to trap in the steam... this is fast, so keep an eye on it!
