25.01.2022 Thai Chicken Salad Its super important for us to all keep a healthy focus on what were eating with the weird lifestyle were leading right now. Definitely, if you want ice cream or pasta, do it. Smile. BUT getting those veggies in is going to be key to feeling good and keeping your immune system strong! What You Need... 7 oz. (200g) chicken thighs, skinless 1 tbsp. coconut oil 2 limes, juiced 1 tbsp. fish sauce 1 tsp. coconut sugar 1 clove garlic, minced 1 tbsp. olive oil 2 handfuls salad leaves 1 medium cucumber, sliced 1 red onion, sliced 1 red pepper, sliced 1 handful fresh mint 1 handful fresh coriander cup peanuts, roasted What You Need To Do Season the chicken with salt and pepper. Heat the coconut oil in frying pan over high heat and fry the chicken until brown and cooked through. Remove from the pan and let it rest on a plate. Meanwhile, make the dressing by mixing the fish sauce, lime juice, sugar, garlic, and olive oil in a small bowl. Then, mix the salad leaves and sliced vegetables in a large bowl and drizzle with the dressing. Divide the salad between plates, cut the chicken into strips, and place it on top of the salad. 18.01.2022 TASTY NOODLES WITH CHICKEN & VEG 5 oz. (150g) Asian noodles (e.g. chow mein) 1 cup (240ml) coconut milk 1 cup (240ml) chicken stock... 4 tbsp. soy sauce 1/2 tsp. turmeric 1/3 tsp. hot paprika 1/3 tsp. sweet paprika 1 tbsp. lime juice 1 tsp. coconut sugar 1 tbsp. peanut butter 5 oz. (150g) chicken breast, chopped 1 medium zucchini, chopped 5 oz. (150g) mushrooms, chopped 2 handfuls spinach 1/3 cup (10g) basil leaves Place noodles in a bowl and cover with boiling water, then let it stand for 5 minutes and drain (or cook according to the instructions on the package). Pour the coconut milk into a wok or pan and bring to a boil. Then add the soy sauce, spices, lime juice, sugar, and peanut butter. Simmer for 5 minutes, stirring now and then. Add the chopped chicken and cook for 5 minutes, then add the zucchini, continuing cooking for another 5 minutes. Finally, add in the cooked noodles and spinach. 18.01.2022 BEEFY RATATOUILLE WHAT YOU NEED: 500g minced beef 2 red onions, chopped into wedges... 4 garlic cloves, sliced 1 eggplant, chopped 1 zucchini, chopped 3 capsicums, chopped 5 tomatoes, chopped bunch of basil, stalk and leaves separated, chopped 2 tbsp. olive oil thyme, to taste (400g) tin chopped tomatoes 2tbsp. tomato paste 2 tbsp. balsamic vinegar lemon, zest WHAT YOU NEED TO DO: Heat a dry nonstick pan over high heat and cook the beef until browned. Transfer to a dish and set aside. Heat the oil in a large saucepan over medium heat, add the aubergines, courgettes and peppers. Cook for 5 mins, then also transfer into a dish and set aside. Add a little more oil to the pan, and cook the onion, garlic, basil stalks and thyme for about 10 mins. Next, add in the cooked veg and beef alongside the chopped tomatoes, tomato paste, and vinegar. Season with salt and pepper and mix well. Simmer the veg covered, over low heat for 35 minutes. Lastly, add in the basil leaves, lemon zest and season with salt and pepper to taste. Mix well and serve.

(300g) penne or other pasta... 1 tbsp. olive oil 2 cloves garlic, minced 1 onion, chopped 1 red bell pepper, chopped 1 can (14.oz/400g) plum tomatoes 1 tsp. dried oregano 11 oz. (320g) canned tuna, in water 7 oz. (200g) fresh spinach What You Need To Do Cook the pasta according to instructions on the packaging. Heat the oil in a large pan over medium-high heat. Add in the garlic, oregano and onion, and cook for 2-3 mins, until softened. Next, add in the chopped pepper and plum tomatoes. Using a wooden spoon, break up the tomatoes into pieces and cook for 5 mins. Add in a splash of water if necessary, to avoid burning, and season with salt and pepper. Once pasta is cooked, add it to the pan and combine. Next, add in the spinach and cook for another 2-3 mins until wilted. Finally, add in the tuna, mix well to combine and take off the heat. Veggies like sweet potato and cauliflower last a while in the fridge, so they’re great for having around when we’re avoiding the shops. Get amongst this plant-heavy curry tonight! 1 medium onion, sliced... 1 tbsp. coconut oil 2 cloves garlic, crushed 1 tbsp. ginger, grated 2 tsp. ground cumin 1 tsp. hot paprika 2 tsp. turmeric 1 tsp. ground coriander 1 can chopped tomatoes 1 cup (240ml) water 1 lb. (450g) sweet potatoes, peeled, chopped 10 oz. (300g) cauliflower 1 cup (240ml) coconut milk cup (70g) cashew nuts coriander, to serve Peel the onion, cut it in half, then cut into thin half slices. Heat the oil in a pot, add the onions and cook, stirring for about 3-4 minutes. Next, add in the garlic and ginger and stir-fry for 1 minute. Add in the spices, mix well, and fry together for another minute. Add the chopped tomatoes and water and bring to the boil. In the meantime, add the peeled and cubed sweet potatoes and season with salt and pepper. Simmer for 30 mins uncovered. Next, divide the cauliflower into small florets and add to the pot. Pour in the coconut milk, mix, cover, and cook for another 10 minutes. In the meantime, roast the cashew nuts in a dry frying pan. 13.01.2022 Honey Garlic Drummies! Chilly times call for sticky, spicy goodness. Get some quality free range drummies and enjoy this crazy simple dish! 8 chicken drumsticks ... For the Marinade: 1 tbsp. olive oil 1 tbsp. sesame oil 1/4 cup (60m) tamari sauce 2 tbsp. lemon juice 3 tbsp. honey 6 cloves garlic, minced 1-inch ginger, peeled and grated tsp. chili flakes In a bowl, combine all of the ingredients for the marinade and mix well. Set aside. If you have time, place the chicken in a sandwich bag, add the marinade and refrigerate for as long as you can, up to 24 hours. If baking straight away, massage them in the bag with the marinade for about 5 minutes. Preheat oven to 375F(190C). Transfer the drumsticks and the marinade into a baking dish and bake uncovered for 45-50 minutes, until they are cooked through and browned. Serve hot, with pan juices and your favourite side dish (e.g. potatoes, rice, salad, etc.). @ Narrabeen, New South Wales, Australia
13.01.2022 ZUCCHINI & CARROT FRITTERS WITH AVOCADO DIP An awesome little recipe I knocked up with my friends at @core9warriewood , this is a great way of stretching out your veggies into a cafe style brekkie! Remember those?WHAT YOU NEED Serves: 4... ó cup (85g) quinoa 2 medium carrots, grated 1 medium zucchini, grated 5 eggs packet cherry tomatoes 4 sprigs basil, finely chopped 10 blades chives, finely chopped 2 tbsp. flour 2-4 tbsp of olive oil 2 avocados Juice of 2 lemons WHAT YOU NEED TO DO . Cook the quinoa according to instructions on the packaging. Grate the carrot and zucchini using the large holes and place the vegetables in a bowl. . Add in the eggs, cooked quinoa, chopped herbs and stir well season with salt and pepper and mix in the flour. . Heat some oil in a pan, add oil and spoon a tablespoon or two of the batter into the pan for make 12 fritters. Fry for 1 minute, turn gently turn with a spatula and fry for another minute or two. . Continue in the same way with the rest of the batter. . Cut the avocado in half, remove the stone, place the avocado together with lemon juice in a blender and blitz until smooth. Season with salt and pepper and serve with the fritters. @ North Narrabeen

12.01.2022 Moroccan Chicken Drumsticks Sorry for the break team! Lots of stuff to manage. Chicken Breasts and thighs are getting a little hard to come by, so drumsticks are a great cheap and delicious alternative!... What You Need 2 tbsp. olive oil 8 chicken drumsticks 1 onion, halved, sliced 2 cloves garlic, crushed cup (15g) parsley, chopped 2.5 oz. (70g) green olives, lemon, juice only 1 tsp. flour Spices: 1 tsp. turmeric pinch saffron 1 tbsp. paprika tsp. ground cumin What You Need To Do Heat the oil in a large pan, and fry the chicken drumsticks on all sides until golden. Add the onion and garlic. Season with salt and pepper and cook for another 3-4 mins. Pour in 1 cup (240ml) of boiling water and add the spices. Mix well and bring the boil. Add half of the chopped parsley, mix, cover the pan with a lid, reduce the heat and simmer for 30 minutes. In the meantime, turn the meat over half-way through the cooking time. Finally, add the green olives and lemon juice, and mix well. Mix the flour with 2 tbsp. of water, and then with 2 tbsp. of the sauce from the pan. Pour this mixture into the pan and mix well. Cook uncovered for another 10-15 mins until the sauce thickens and the meat is tender. Sprinkle with the remaining chopped parsley and serve. Serving suggestion: bulgur, potatoes, brown rice, tomato salad @ North Narrabeen

06.01.2022 CURRY VEGGIE SOUP . On a rainy day like today, we all need some spice and some veggies! . (I love to add extra chilli, but do it to your taste )... . WHAT YOU NEED . 1 tbsp. olive oil . 1 medium onion, diced . 1 tbsp. ginger, minced . 2 garlic cloves, minced . 1 carrot, peeled, grated . 1 red bell pepper, chopped . 1 large zucchini, chopped . 1 tbsp. curry powder (or more to taste) . 2 cups (500ml) chicken or vegetable broth . 1 tomato, chopped . 1/3 cup (80ml) heavy cream (or normal) . WHAT YOU NEED TO DO . In a large pot, heat oil and sauté the onion. Add the minced ginger and garlic then continue for 2-3 more minutes. . Next, add the peeled and grated carrot and sauté for about 2 minutes, stirring occasionally. Add the chopped peppers and zucchini. Cook the vegetables for about 5 minutes, season with curry powder and mix well. . Next, pour in the broth and bring to a boil. Cook covered for about 10 minutes until the vegetables are soft. In the meantime, add the chopped tomatoes. Season with salt. . Once vegetables are cooked, take off from heat and blend using a hand blender. Add in the cream, season for taste, mix well and serve. 06.01.2022 One Pot Mexican Quinoa A delicious, dirt-cheap veggie dish full of goodness that you can probably make with everything in your pantry! 1 tbsp. olive oil... 2 cloves garlic, minced 1 chilli pepper, sliced 1 cup (170g) quinoa, uncooked 1 cup (240ml) vegetable stock 1 tsp. paprika tsp. hot paprika tsp. cumin 1 cup (165g) sweet corn, drained 1 cup (170g) black beans, canned, drained 1 can (14 oz./400g) chopped tomatoes 1 avocado 1 lime handful fresh coriander Heat the oil in a large pan over medium heat. Add in the garlic and half of the sliced chili pepper, cook for about 2-3 mins. Add in the raw quinoa and vegetable stock, increase the heat and add the spices (paprika, hot paprika and cumin) season with salt and pepper and mix well. Next, add the sweet corn, black beans and chopped tomatoes. Mix well to combine, cover and bring to boil. Reduce the heat and simmer covered for about 20 minutes until quinoa is cooked. Serve with the avocado, drizzle of lime juice, fresh coriander and the remaining sliced chilli pepper. @ North Narrabeen
