25.01.2022 http://Thursday Macaron Tip// How do you achieve such a dark coloured macaron? Adding too much gel colour can really throw off your macaronage and sometimes even add a slightly bitter taste to your macaron shell.... To help acheive intense dark colours, add chocolate powder as well as gel! Also, don't be surprised if your macaron feet come out a little smaller than usual. This is completely normal. 25.01.2022 http://Thursday Macaron Tip// Have you noticed a good macaron recipes will have egg whites in grams, not the number of eggs? Always measure your egg whites. Why? The amount of liquid in the egg whites affects the dry or wetness of your batter. Which means if you have large egg whites you have a more liquid batter and vice versa. Also, break your egg whites properly. It is very very important that your egg whites have no trace of egg yolk or th...ey will not get to stiff peaks. 25.01.2022 http://Thursday Macaron Tip// Why aren’t my egg whites whipping up? Ensure your egg whites are at room temp and ensure you have no egg yolk in your mix. It’s very easy to have a small bit fall in when separating.... Most importantly, ensure all your equipment has been thoroughly cleaned with vinegar or decorators alcohol and then dried with paper towel. This will clean any grease residue off. 24.01.2022 http://Macaron Tip Thursday// Part 3: Baking Paper (Scroll back to last Thursday to read Part 2)... Baking paper (sometimes referred to as parchment paper) would be the most known and economical of all for baking macarons. Easily found in Aisle 6 of your local supermarket, it’s easy to find and use but is it good for macaron baking? Simply put, yes. It can easily heat with your tray and and with a pair of scissors, easily adjust it to suit your tray size. A roll of baking paper costs less than 1 silicon baking mat making it very economical. However it is a one time use item and wasteful. Pros: Inexpensive Easy to find in your local supermarket High temperature range Can be cut to size Cheaper than a silpat mat and Teflon May No washing required Cons: 1 time use only Baking paper can still move about on the tray and cause your macarons to have a non flat base - making the macarons not perfectly round either. See second picture If you have a fan forced oven, you’ll need to use a bit of macaron mixture to stick your baking paper to your oven tray. It can make the baking fly around on your tray otherwise. this same movement will make your macarons not uniform and not round. They tend to be a little oval shaped instead sometimes. they will need a lower heat than mats and you will have to adjust oven temps So today I end my review on silpat mats, teflon mats and baking paper. I do hope it has helped you. But remember, with macarons, do what works FOR YOU! If you’ve found the right sequence, keep going with it. My preference for these three run in this order: 1. Silpat mats (worth the $$) 2. Baking paper (easy and inexpensive) 3. Teflon mats What do you think works for you? Place your coupler base in the bag and mark where you’d like to cut. 2. Push back your coupler and cut... 3. Add your Size 12 piping tip on to the coupler 4. Screw on the top of the coupler and voila! Ensure it’s on straight and tight! See more

16.01.2022 I'm absolutely loving that last week all the emails received were partners ordering beautiful cakes for their other halves. All were making a fantastic effort now that they have a little more time up their sleeve. This Black Forrest Cake layered with cherry compote, swiss meringue and morello cherries throughout. Devine!

13.01.2022 At last my turn for a Bluey cake! This cake went hand in hand with the macaron number cake. I enjoyed having creative control and everyone loved it which is always wonderful to hear back. Raspberry swirl white mud cake was hiding under the layers of ombré blue Swiss meringue and blue chocolate drip. Do you have any Bluey fans in your house?

02.01.2022 Yesss! Wedding are back...sorta! That didn't stop Roxanne and Reza though. What I loved about this couple is that they chose not to compromise their special day. Go BIG or go home right? A 2 tier chocolate cake with vanilla swiss meringue buttercream layers and gorgeous fresh flowers to decorate. A massive thank you to Kelly from @kellscaketoppers who sped this beautiful gold cake topper out to me. (You're a legend!!) Simple, elegant, beautiful. Love it.
