Enjoy, Stay Well & Fill your hearts and bodies with an abundance of Love Chocolate Tahini Cookies 1 cup + 1/4 cup spelt flour 4 TBS cacao powder 1/2 heaped tsp Baking soda Pinch of salt 1/2 cup maple syrup 1/4 + 1/8 cup tahini 1/2 cup Noshu chocolate chips or crushed nuts Method: 1. In a large bowl whisk tahini and maple syrup until smooth. 2. In a separate bowl, soft flour, cacao, baking soda and salt. Stir with a spoon until well combined. 3. Slowly add flour mixture into tahini mixture, stirring with a spoon until well combined. 4. Mixture will be sticky and a little tacky. If too sticky and you can’t roll add 1TBS flour at a time until it just comes together. Then roll with damp hands. This will avoid dough sticking to them. 5. Divide mixture into 16 even balls. Using damp hands, roll into balls then press down with a wet fork so cookie dough doesn’t stick. 6. Press chocolate chips into each cookie, or sprinkle wit crush nuts. 7. Bake in a moderate oven (180 degrees Celsius) for 10 minutes. 8. Cookies will be soft when cooked. Allow them to cool on the tray before transferring. They will form up as they cool, whilst still remaining soft and chewy inside. 9. Store in a container with 1 sheet of paper towel to avoid soggy biscuits.
