20.01.2022 What, you may well ask, is this cute little green dalek-esque thing, and is it really edible? To which we will reply enthusiastically, this little gem is a nasturtium studded, vegan, almond curd ball. It is crazy easy to make and you will be the talk of the party if you make one (when we finally get round to having parties again, remember those?). 19.01.2022 Spelt scones are a delicious thing. We love this recipe from our founder @cherie_hausler - perfect with our Turmeric Butter. Sunday scones and tea anyone? ATT x Spelt Scones 4 cups organic unbleached Spelt flour 8 tsp baking powder... 2 cups coconut cream (not milk) 2/3 cup plant based milk (I use soy) 4 Tbsp icing sugar pinch salt To make the scones, preheat the oven to 200C. Prepare a baking tray with a dusting of flour. Add the Spelt flour, baking powder, icing sugar and salt to a medium sized mixing bowl and ensure there are no lumps in the flour as you mix everything together. Add the coconut cream and milk and cut in to the flour with a butter knife until the dough just comes together. Place the dough on a floured surface and cut into 12 scones (or however many your sized scone cutter gives you), then into the oven. 18.01.2022 - Vegan Almond Lemon Cake with Aquafaba - In celebration of Spring we have a beautiful set of recipes to share with you prepared by our founder @cherie_hausler using All The Things. While usually we would start at the beginning of our seasonal menu we thought to throw caution to the wind and post dessert first tonight. Who else wants lemon and almond cake right about now? ATT xx Meyer Lemon & Almond Cake with Meringue... Makes 1 x 20cm 3 layer cake For the cake: 2 jars ATT Almond Curd with Vanilla & Maple Syrup 1 cup plant based milk (we used Bonsoy) 4 Meyer Lemons - juice and zest 300g Rapadura sugar (or raw sugar) 150ml extra virgin olive oil 450g unbleached spelt flour (or plain flour) 2 tsp baking soda 1 tsp baking powder pinch salt For the meringue: 1 cup chickpea liquid (aquafaba), drained from canned chickpeas 1 cup raw sugar 3/4 tsp cream of tartar Meyer lemon syrup: 1 cup Meyer lemon juice 1 cup raw sugar To make the Meyer lemon syrup, boil the lemon juice and sugar together until the mixture has reduced by 1/3. Cool. Pre heat oven to 180C. Prepare 3 x 20cm springform cake tins. In a stand mixer, blend the jars of almond curd with the soy milk until smooth. Add the olive oil, sugar, lemon juice and zest. Mix. Add the flour, baking soda, baking powder and salt. Mix until completely blended into a smooth batter. Divide the cake batter equally between 3 x 20cm oiled and lined spring form baking tins. 17.01.2022 We thought now might be a good opportunity to introduce you to the the incredible woman behind all that we do here at All The Things. @cherie_hausler has been vegan for over 11 years, and an animal lover since she could crawl. She has asked for a pony every Christmas and birthday from the time she could say the words, and last Christmas Eve she got her wish, rescuing an ex-trotter. Dreams do come true, even if they are a little delayed (if you pop back through our IGTV videos... you may even see him there) . She founded All The Things on the principle that she wanted to make the kind of food you reach for first, without even knowing that it’s 100% plant-based and whole, more often than not gluten free, but most importantly, tastes amazing. Not only are all the products here at ATT a testament to her amazing creativity but so are the recipes we release for each of our seasonal tables. 14.01.2022 Vegan Oatcakes Recipe- A couple of posts ago we shared a little how to video of our founder @cherie_hausler demonstrating how to get these super cute imprints on oat biscuits. We thought we might pop the recipe in here so you can make them too. Don't forget to save them and if you want to make some as part of our Spring Table Menu you can check out the other recipes in our highlights as well. ATT xx Spelt & Turmeric Oatcakes ... 85g ATT Raw Turmeric Butter 110g unbleached spelt flour (or plain flour) 1/2 tsp salt 1 tsp baking powder 225g rolled oat flour cold water, to bind dough Preheat the oven to 190 C. Line a baking tray with baking paper. In a food processor blitz the rolled oats until you have fine flour. Then add the spelt flour and butter. Process until the mixture resembles fine breadcrumbs. Add the salt, baking powder and enough cold water to bind the dough. Add the water in small amounts so you don’t end up with a dough that is too sticky. Turn the oatcake dough out onto a floured surface and roll out. Cut into discs using a cookie cutter, and if you have a milk jug or sugar bowl with a cut glass pattern in the base, dip this in flour and use it to impress a stamped pattern onto your oatcakes. Place on the prepared baking tray and bake for 15 to 20 minutes until firm. Cool on a cake rack before adding to a cheese board or enjoying with a cup of tea. See more
