23.01.2022 Mango season has been in for a while so I thought it's time for my lovely mango mousse cake with a little surprise in there! This cake is made up of a fluffly sponge cake base, followed by coconut panna cotta with sago, freshly sliced mango, mango mousse and mango jelly. I love recreating desserts in different form and this cake totally resembles the traditional Hong Kong dessert mango sago which is made up of pureed fresh mango, sweetened coconut milk and cute little sago(...s?) aka baby tapioca pearls.
