25.01.2022 CLINT’S CRAZY BARGAINS . . This weeks special is organic red cabbage for $2.99 each. .... . Did you know red cabbages and other purple coloured fruit and veg are full of anthocyanins which are powerful antioxidants. That’s why it’s important to eat the organic rainbow . . Red cabbage has a good mix of vitamins and minerals, especially folate, which is essential during pregnancy and also helps the body to produce red blood cells. It also contains vitamin C, which helps protect our cells by acting as an antioxidant, and potassium, which we need for a healthy heart. . . Our favourite sauerkraut recipe . . 2 kg of green or red organic cabbage 3 Tbs good quality Celtic sea salt 1 tsp caraway seeds 1 tsp peppercorns . . 1. Take off outer leaves. I do not wash as it’s organic. You can either slice super fine or leave chunky, depending on how you like your kraut. Cut and place cabbage in a large glass bowl. . . 2. Sprinkle cabbage with sea salt and leave for 20-30 mins. The salt draws the moisture out of the cabbage and softens it. . . 3. Start to massage the cabbage with your hands and try and get as much moisture out of it as possible. Once this is achieved, stir through caraway seeds and peppercorns. . . 4. Place into a large jar with a sealed lid. Ensure that it has been sterilised with hot water and make sure detergent that you use is a natural one so it doesn’t kill off bacteria. . . 5. Make a fist and push cabbage right down into bottom of jar, getting rid of any air pockets etc. Then pour over juice from cabbage and make sure it covers all the cabbage. I use an outer leave from the cabbage as a weight however you can get rock like weights specific for kraut making. . . Store in a cool dark place. Check in 5-7 days and it will be ready. If you you like to get maximum flavour leave for 2-6 weeks and just check checking weekly. . . Note: when making sauerkraut, please only use organic cabbages otherwise you are just fermenting glyphosate and a range of other pesticides/chemicals (as cabbages are prone to white moth). . 18.01.2022 CLINT’S CRAZY BARGAINS . This weeks special is organic lemons for $3.99 KG. . .... We love lemons in our household and go through lots. One thing that a lot of people don’t realise with lemons is that they are acidic, however only until they hit the body. . . Once they enter your body, they become alkaline. So if you have issues with acidity, lemons are not your enemy but your friend! . . Having half a lemon freshly squeezed in lukewarm water in the morning helps to kick-start your metabolism. Making a lemon and ginger tea is one of our faves at night too. Just slices of lemon and ginger in hot water mmmmmmmmm. . . RAW LEMON ZESTY VEGAN SLICE . Ingredients . Base: . 2 cups of any nut besides cashews (I used almonds and walnuts and ensure they are organic) 1/2 cup shredded coconut 5 medjool dates pitted . Topping: . 2 cups organic cashews (soaked for 2 hours) 1 can of coconut cream (400ml) Zest and juice of 2 lemons (leave some zest aside for sprinkling over the top) 1/3 cup maple syrup 2 tbs melted coconut oil 1/4 tsp vanilla extract A pinch of turmeric powder for colour (optional) . Instructions . For the base, line a 16cmx25cm (approximately) baking dish with baking paper. Blend the base ingredients in a food processor until it's slightly crumbly but still sticks together. Press the base mix on the bottom of the lined being tray evenly and set aside. Blend all ingredients in a food processor or high speed blender until smooth. Make sure that it's super smooth. Pour the topping over the base and sprinkle some lemon zest over the top. Set aside in the fridge for around 3 hours or until you can touch the top and its set. If you want it firmer, you can freeze it for 30 minutes before serving. . So citrusy and delicious . OPEN tomorrow 10.30am until 6pm See more

This is a super duper favourite when it comes to almar specials so best come in quick so you don’t miss out. . . Have you tasted the difference between conventionally grown organic bananas?? With organic, not only are you not getting the synthetic Fertilizers, pesticides and insecticides, but the taste is SOOO Much better. Organic bananas don’t leave your mouth feeling furry. . . Our go to revipes are; sliced bananas with organic peanut butter with sprinkled chia seeds on top Pete evans banana bread recipe Frozen to add to smoothies OR choc coated frozen bananas pictured . . Cut ripe bananas in half widthwise. Insert a popsicle stick in the bottom, leaving plenty of room for your hand to hold. . Place bananas on a baking sheet lined with parchment or a silicone baking mat and freeze for at least 2-3 hours. . When you’re ready to dip the bananas, set out any desired toppings so your station is ready to go. . melting chocolate chips and coconut oil together in a saucepan over low heat until silky smooth (we also have dairy free choc chips at almar or you can make your own vegan chocolate) . Pour the melted chocolate mixture into a narrow glass (like a juice glass!). Dip the frozen bananas into the chocolate mixture + immediately sprinkle with any desired toppings. . Place back on the baking sheet + repeat with remaining bananas. . Pop the bananas back into the freezer for a few minutes to harden, then transfer any leftovers into a glass container and freeze. . That’s right people, with an easing of restrictions Wassim and his team can trade and operate out of their own space They have been working frantically to complete their kitchen and be ready for service next week so keep an eye out for when this happens and jump back over to support such an iconic local venue. Him and cannon spent the day on the dingo digger, with the auger, digging holes for these beautiful repurposed Murray pine posts. . .... These Murray pine posts were kindly gifted to us. They have just come from an 100 year old shearing shed that has just been dismantled in walbundrie. They were piled up ready to be burnt, however were rescued and have now been relocated to be recycled and add beautiful character to our mighty, big fence. The smell of lanolin and oily remains are just divine. . . This fence ain’t going no where and these two lads are ready for a snooze. . . . . 16.01.2022 CLINT’S CRAZY BARGAINS . . This weeks special is organic zucchini’s for $2.99 KG. .... . Check out this yummy recipe. . . INGREDIENTS . 4 medium sized zucchini 2 tablespoons pine nuts 200g feta 120g sour cream 1 clove garlic 1 teaspoon grated lemon zest 2 tablespoons cold water 2 tablespoons extra virgin olive oil small handful mint leaves, roughly chopped freshly ground black pepper . METHOD . Top and tail the zucchini. Cut lengthways into 3-4 strips. . Brush with a little oil and then cook on a griddle pan or bbq until tender and well coloured. . At the same time toast the pine nuts in a small pan over a low heat until just coloured. . Place the feta, sour cream, garlic, lemon zest and water in the bowl of a food processor and blitz until smooth. Add 1 tablespoon of the oil and mix just to combine. . Spoon a few large spoonfuls of the whipped feta onto a serving plate, top with zucchini strips, drizzle over remaining oil and garnish with mint leaves, pine nuts and a sprinkle of black pepper. . The perfect time to stock up and do some preserving or baking whilst they are still in season.... . GLUTEN FREE PLUM CAKE . 900g ripe plums, pitted and halved 2 Tbsp ground flaxseed + cup water 1 cup almond flour 1 cup rice flour 1 Tbsp aluminum free baking powder tsp sea salt 1 cup non-dairy milk (coconut, almond or rice) 2 Tbsp. extra virgin olive oil 2 Tbsp. pure maple syrup 1 Tbs. ground cinnamon 2 Tbsp. raw cane sugar . METHOD . Preheat oven to 190 C. Add flaxseeds to water and rest for 15 min In a medium size bowl mix together flour, baking powder and sea salt . In a separate bowl whisk together milk, flax mixture, olive oil and maple syrup Add wet ingredients to dry and mix until smooth . Spread the batter in an 8-inch round baking pan and top with plums facing cut side up and then sprinkle with cinnamon and sugar. Bake for 40 minutes. . You can freeze them up to 3 months in the freezer and they won’t loose an ounce of there nutritional value. ... . Green beans actually contain several proteins, carotenoids and other antioxidants making it a simple source of some amazing nutrients! . So why are green beans good for health? Why did mum in your childhood always say ‘eat your beans’? Well could mostly be due to how good they are for your digestive health - hello to the high fibre content and starches. The humble onion is found in every kitchen, but it’s magical powers make it an impressive medicinal plant, like garlic too. They are both part of the allium family. . . Onions contain lots of fibre, antioxidants and are a good source of prebiotics. They are also super rich in vitamin B and C and are full of sulphur, iron, calcium and manganese. . . Apart from using onions in a lot of our cooking at home, a fave of ours is caramelised onions. . . Soft, richly flavoured caramelised onions are a wonderful accompaniment to cold or hot meats, pates and terrines and make a great base for a savoury tart including Mrs Almar’s favourite caramelised onion and fetta tart. You simply cool the onions slowly to caramelise their natural sugars, while the balsamic helps as well. . . C a r a m e l i s e d O n i o n s . 2 Tbs organic olive oil 3 large brown onions sliced 1 Tbs rapadura/cane sugar (or maple syrup) 1-2 Tbs balsamic vinegar . . METHOD . Step 1 Heat oil in a large frypan over low heat. Add the onions and a good pinch of Celtic sea salt and cook very slowly for 15-20 minutes, stirring occasionally to prevent them from catching. Don't be tempted to turn the heat up, as you don't want the onions to burn. . . Step 2 When onions are softened and tinged golden, add sugar and balsamic - this will start the caramelisation process. Cook onion over low heat for a further 5-10 minutes, stirring occasionally, until sticky and caramelised. NGREDIENTS 1 bunch baby beetroot, trimmed 2 bunches baby carrots, trimmed 1 bunch baby radish, trimmed, scrubbed 2 (about 300g) medium beetroot, trimmed 2 tablespoons olive oil 1 tablespoon balsamic vinegar 1 teaspoon Dijon mustard 2 oranges 100g salad leaves (such as radicchio and rocket) 3 fresh thyme sprigs 100g feta, crumbled 50g organic hazelnuts, roasted, chopped Thinly sliced green shallot, to serve Micro herbs, to serve . METHOD . Step 1 Preheat oven to 200C/180C fan forced. Grease and line a baking tray with baking paper. Arrange baby vegetables on prepared tray, coat with oil and season well. Roast for 30 minutes or until tender. . Step 2 Meanwhile, cook medium beetroot in a saucepan of boiling water for 30 minutes or until tender. Drain. Set aside. Peel beetroot using your fingers. Set aside. . Step 3 To make the dressing, whisk together olive oil, balsamic and mustard in a bowl. Season. . Step 4 Peel and segment orange. Place salad leaves on a serving plate. Slice medium beetroot. Arrange on top of leaves. Add baby veg, orange segments, thyme, feta, hazelnuts, green shallot, micro herbs and nasturtium leaves. 04.01.2022 CLINT’S CRAZY BARGAINS . . This weeks special is organic broccoli for $3.99 KG .... . This is an absolute fave in our house hold when it’s in season. Loved by both the little and big peeps. . . We have lots of lovable broccoli recipes but at the moment it’s this one, . . ROAST BROCCOLI . 1.5 KG organic broccoli Organic olive oil Celtic sea salt Roast almonds Pecorino/Parmesan/Mac fetta . . Cut the broccoli into florets or steaks. Coat in olive oil and Celtic sea salt and toss. Place into a ceramic baking dish and cook in oven at 250’C for 10-12 minutes, then turn broccoli over and reduce to 200’C and cook for another 5-10 mins. . Remove from oven and drizzle with olive oil, roast almonds, and your choice of cheese. . Bellissimo . Broccoli is prone to fungal, bacterial and white moth problems so conventional broccoli is often sprayed with a lot of fungicides and pesticides. He has previously worked on other organic and biodynamic farms including wymah organic lamb and olives locally. . . Whilst the green manure crop is in and doing its thing, today’s project was pulling down the perimeter fence ready to start putting up the rabbit/deer/goat/kangaroo proof fence. . . 02.01.2022 O u r C o m p o s t i n g C o r n e r . All our food scraps from ALmar and at home go to either our compost, our worm farm or our chooks. So there is NO waste. . . ... Compost, once broken down, is a simple way to add nutrient rich humus to your lawn or garden that fuels plant growth and restores vitality to depleted soil. It’s free, easy to make and good for the planet, that provides us with so much. . . As things start to warm up and break down, microscopic organisms will increase and help aerate the soil, break down the organic matter for plant use and ward off plant diseases. . . A healthy compost should have much more carbon than nitrogen. . C a r b o n . Carbon-rich matter (like branches, stems, dried leaves, peels, bits of wood, bark dust or sawdust pellets, shredded brown paper bags, corn stalks, coffee filters, coffee grounds, conifer needles, egg shells, straw, peat moss, wood ash) gives compost its light, fluffy body. . . N i t r o g e n . Nitrogen or protein-rich matter (manures, food scraps, green lawn clippings, kitchen waste, and green leaves) provides raw materials for making enzymes. . . A simple rule of thumb is to use one-third green and two-thirds brown materials. The bulkiness of the brown materials allows oxygen to penetrate and nourish the organisms that reside there. Too much nitrogen makes for a dense, smelly, slowly decomposing anaerobic mass. . . Good composting hygiene means covering fresh nitrogen-rich material, which can release odors if exposed to open air, with carbon-rich material, which often exudes a fresh, wonderful smell. 01.01.2022 CLINT’S CRAZY BARGAINS . This week’s special is organic celery for $4.99 a bunch. . Celery contains vitamin C, beta carotene, and flavonoids, but there are at least 12 additional kinds of antioxidant nutrients found in a single stalk. It’s also a wonderful source of phytonutrients, which have been shown to reduce instances of inflammation in the digestive tract, cells, blood vessels, and organs.... . Conventional celery is included in the dirty dozen of highest chemically sprayed produce, so best to choose organic where possible, especially if you are juicing. . It’s best stored in the fridge in a glass container with a small amount of water in the bottom to keep it fresh and crisp. . Another tip is that the leaves can be used in a slaw, in your broth or in any salad. . CELERY AND APPLE SLAW . Ingredients . 4 celery sticks, cut into matchsticks 1 large green apple, cut into matchsticks 100g goat's cheese, crumbled 35g (1/3 cup) walnut halves, toasted, coarsely chopped 2 tablespoons creme fraiche or gevity mayonnaise 2 tablespoons lemon juice 1 1/2 tablespoons chopped fresh chives . Method . Step 1 Combine the celery, apple, goat's cheese and half the walnut in a large bowl. . Step 2 Whisk the creme fraiche/Mayo, lemon juice and 1 tablespoon chives in a small bowl. Season. Pour over the celery mixture and toss to combine. Sprinkle with remaining walnut and chives. .
