Maisel decided to team up with the family-owned breweries Schneider Weisse and Privatbrauerei Erdinger Weibru regarding the Bavarian double maturity method, a brewing craft, which was handed down for generations. In contrast to many other breweries Maisel, Schneider and Erdinger allow their wheat beers to mature a second time after the first standard fermentation. Now the three breweries have agreed on a visible sign for the double maturity method: The quality seal "Bayerische Edelreifung - zweifach kultiviert". 13.01.2022 This is where I am brewed, in a dark cellar under a natural rock shelf where day and night all year round I get ready for you at a constant 2 degrees celsius . These tanks were built on site, how else would they get in there? Barock Dunkel and Asam Bock have been brewed in this dark room since year 1050 and this liquid bread (flussiges brot) has been still to this day consumed by the monks of Weltenburg Abbey for their well being, not for enjoyment of course. You can enjoy it though in Australia with a little help from @alpenliquorwholesalers
