22.01.2022 Sharpening Hi all, I'll be out and about sharpening in you area for the next week or so. If you'd like me to get your blades cutting effortlessly give me a call or a text. I provide a fully mobile service that can come to you at your chosen location. Knives, garden tools, woodwork tools and clippers. There's not much I can't sharpen. I'll get your blades sharp and show you how to keep them that way for 5-6 month. I've also got some excellent Landsky sharpening tools to keep your secateurs and garden tools sharp. And some ceramic steels to keep your knives honed between sharpening. I also stock a small range of beautiful Japanese style kitchen knives. 05.01.2022 Have a look at this. Just got in a couple of these beautiful wooden handle, stainless steel with Damascus markings, very sharp 8" Gyuto knives. They are perfect for rock chopping, thrust cutting and push pull cutting. Although the name translates as beef sword it's a very versatile tool used for both vegies and all types of meat. And it looks great. The thing with Japanese style knives is they are thinner than traditional western style knives. This means that while both trad...itions can have the same angled bevel the Japanese knife will glide more easily through the food because they have less resistance. I hope that makes sense. Now I need to be up front, this supplier is Chinese BUT he is a very good knife maker in the Japanese tradition and I've been buying from him for a while..
