25.01.2022 Lunch - Blanched new season young asparagus with a homemade Vividus EVOO & citrus mayonnaise. Seasonal eating at it’s best with the last of the Winter citrus & the first of the lovely Spring greens. I found a bottle of stashed 2019 harvest Vividus EVOO & decided to make a delicious mayo with it using our chardonnay vinegar, orange & lemon zest (& juice), and a good dollop of proper dijon mustard. Fresh free range eggs to start of course & lots of cracked black pepper to finis...h. I make a version of this mayo every year to celebrate the start of asparagus season, usually with new season ALTO Vividus EVOO. Sadly we had almost no Hardys Mammoth fruit on our trees this year, the single olive varietal that we use to produce Vividus, so we couldn’t release a 2020 harvest Vividus EVOO, but I have to say last year’s is still tasting fantastic and so very good in this mayonnaise! #alto #vividus #evoo #evoooneverything ##australianextravirginoliveoil #spring #vegetarian #favouritethings #lunch See more

19.01.2022 Yesterday, our own @olivequeenoz had the great honour of being the panel leader for the NSW judging panel of the Australian International Olive Awards, a job that she takes very seriously as she understands first hand how much hard work, dedication & effort it takes to produce an award winning extra virgin olive oil. A BIG thank you to our fellow judges that gave their time & palates for this most important cause, and to the legends @twoprovidores for kindly lending us the us...e of their space for the day, & also to the lovely @whatjesscooked for looking after us, and providing us with a delicious lunch platter of local cheeses & smallgoods after a long and exhausting day of judging. We would add that you really should have two to three different extra virgin olive oils in your pantry as the many different flavour profiles you will find across the many great Australian EVOOs available out there suit different foods... Use mild EVOOs for more delicately flavoured foods like fish and Robust EVOOs for things like meat!

A beautiful tradition & friendship originally forged with my lovely mate @monty_koludrovic, and continued with the super talented @alexsprichard, and fully supported by the inimitable @mauriceterzini. Knowing that an oil that I have carefully blended ends up as part of the opening a...ct of an exquisite dining experience at Icebergs Dining Room and Bar, alongside some excellent @olssonssalt & beautiful @iggysbread_downunder bread, is one of the major highlights of my working year.
