Lunch inspiration ! #Repost @gatherandfeast a little inspiration to kick off the new week! and that green dressing (RECIPE below) . quinoa -- smokey paprika roasted sweet potato -- broccolini -- avo -- boiled egg -- halloumi -- quick pickled red onion -- basil -- parsley -- and this creamy green dressing... . CREAMY GREEN DRESSING . . INGREDIENTS . 3 tbs thick greek or coconut yogurt 2 tbs extra virgin olive oil 3 tbs apple cider vinegar Juice of half a lemon 1 small garlic clove, finely grated or crushed 1/2 cup fresh basil leaves 1/2 cup fresh parsley leaves Generous pinch of sea salt . .
