14.01.2022 Who doesnt love a choc chip muffin with their morning coffee? Here are a few tips for when you are making your next batch of muffins.... * Dont over mix your batter. Gently fold your wet ingredients into your dry and only mix until almost combined. A few spots of flour is perfectly ok. Over mixing will cause a tough crumb. * Swap half of your milk for yoghurt....any flavour will do. It will give you a softer, moister crumb. *If you have the option, turn the fan off on y...our oven or bake them at 160C. *Finally, underbake them, just by a minute or two. They need to sit for a few minutes when you take them out and will continue to bake. This will stop them drying out. Enjoy! PS I should probably mention that I dont use chips I use chocolate melts chopped or broken up. This also makes them more fudgy.
