03.01.2022 END THE DAY RIGHT WITH A HEALTHY DINNER Warm yourself with some comfort food. Have a light Chicken and Mushroom filo pie. Recipe below. Enjoy! ~ Kim... Serves 4 | Prep/Total time 30mins Ingredients: 1 large free range chicken breast (chopped into small cubes); 1 zucchini (chopped into small cubes); 4 mushrooms (chopped into small chunks); 1 large tomato (diced); 1 large clove of garlic (diced); 1 large onion (diced). Method: Add ingredients in a fry pan on low heat with Extra Virgin Olive oil, balsamic vinegar, 1 teaspoon organic unsalted butter. Add herbs and spices to taste e.g. turmeric, nutmeg, cinnamon, cracked black peppercorns, cumin and Italian herbs. Cook together on medium heat. Then add 1/2 cup white wine, 2 squeezes of lime juice, 1 tablespoon of Passata cherry tomato puree. Stir, then reduce. Once reduced and cooked, transfer mixture to a baking dish. Scrunch 8 pieces of filo pastry on top of mixture. Put into hot oven at 200C for 20 mins. Eat!
