05.01.2022 Today, we are a different farm. Yes, were still custodians of the same 70 acres. Yes, we still grow all our own vegies, all our own meat, most of our fruit and... eggs and some of our dairy and serve it onsite in a rare feat of not just paddock-to-plate, but that paddock outside the window, to this plate right here. But today, we became a different farm. Thats because every person who works with us brings something new. They bring a new energy. A new slant on things. They bring with them their life experiences, their hopes and joys, and they leave us with all of those, and more. And today, we started a new dawn, as Jonathan Cooper, our original market gardener for over 18 months - as we transitioned from home garden to restaurant garden - has left. I (this is Matthew writing) didnt really hire Jonathan, or Jono as hes known widely throughout Tasmania. I was told by Sadie we were hiring him. And she was told by our friend Mirjam that we should hire him. I just knew hed run a garden before. And I knew him as our neighbour at Salamanca Market, where hed run a stall for over a decade. I also knew how little I understood about gardening, and more importantly, how little time I could spend in the garden while running the rest of the farm; milking, managing the livestock, while overseeing the building of a house and a commercial kitchen, all the while filming two television shows. So we hired him. And gave him free reign. And what a reign he had. He took our dozen or so rows of garden beds and made them into about 60. He rebuilt the poly tunnel, this time with a metal frame and about a tonne of concrete to hold it down in the winds. He reconfigured the irrigation, set the chooks up to forage in fallow parts of the garden, planted the olive grove, propagated, sowed, reaped and more. He created a magic garden. One run on organic principles, where flowers bloom for aesthetic reasons as well as ecological ones. One where so much incredible tasting produce is grown that it overwhelms our modest kitchen. As a cook, it truly is a magic garden, where flavoursome food is picked as ripe as possible, as late as possible before cooking. It makes our job in the kitchen easy; just dont muck it up! When Jonathans new employer rang for a reference, I was guarded. I told them he was about half as good as he really was. You dont get people to work for you as worthy as that and then hand them over on a platter. And he still got the job. Yet, until we hugged and parted ways yesterday, I never felt it was true that he was leaving. Having already hired an amazing new gardener, Nadia Danti, who is just a joy to be around, I didnt feel like we would lose one to get the other. Like the lover being spurned, or being the child to an ailing parent, or the parent of a child leaving home, the reality didnt really sink in until the actual moment of loss. No matter how much you tell yourself something to be true, sometimes you have to feel it happen. My relationship with Jonathan has always been slightly distant. I cook. I want the garden to work for me. And while I wanted to be in the garden, my time and energy was always needed elsewhere. Sadie and I spent so much time building a business based on not just our skills, but on those around us. The garden, while we struggled to open the cookery school and restaurant, cost more than we expected; I never factored in the wages of a gardener for a year before the launch. Then, since we opened, life has been like a runaway truck on a very steep hill. Every now and then you swerve to avoid the biggest trees. Sometimes you want to hit the smaller ones, hoping theyll slow you down without doing any permanent damage. But any chance of letting go of the wheel has dire consequences. So Jonathan and I have led very busy lives on the same piece of land, only occasionally actually having the time to touch base. Two obsessives, working in concert for the one goal, but not actually spending time together. So it came as something of a shock, at the end of a marathon week - after working a few 14 hour days, and catering for the attendees at the magnificent Good Life Permaculture gardening workshop - Jono and I had to say our goodbyes. I knew it was coming, but never thought it would. I have so many regrets about not learning more from Jono. But more than that, I have regrets about not spending more time as companions. Like so many of the relationships Ive had in life, this one couldve done with more time. I suspect thats normal, but I have those misgivings nonetheless. One thing that surprised Sadie and myself, and one that has been impressed upon us since we opened Fat Pig Farm to the public, is our place in our community. Our staff are more than just people who work for us. They are our community. Their families matter to us. Their happiness is important to us. We thrive on their ambition. We adore their sense of ownership. Were proud of the work they do and feel ashamed we cant value them the way we should, financially, simply because they do the kind of work that is not as highly valued in the world as accountancy, IT, or law. Sadly. When people suggest our prices are too high I want to show them our bank statements and shout at them what is your hourly rate? because nobody who works here is getting rich fast. And perhaps that is the joy we have from our team. These are people you want to be around. People you want as friends, not as your financial advisors. Jono is one of those good-souled, warm-natured, hard-working, generous, practical blokes that make you want to be a better person. And gardener. We are surrounded by those kind of people. As our team changes, and grows, there is more wisdom, more humour, more warmth on the farm than we ever thought possible. Ok, so were just growing stuff, and cooking stuff, and teaching others how to grow and cook stuff. But these, in their own way, are noble arts. We work around noble people. The real alchemists turn soil, and water, and sunlight and air, into incredible produce. Others transform that produce into meals that hopefully enlighten and delight. Everyone on Fat Pig Farm has a name, a place, a responsibility, but more than that, theyre interesting, enthusiastic, loving human beings who we value more than well ever probably let them know. They come into our lives and change us forever, in ways they may never understand. So yes, today in some ways does feel like were on a different farm.
