24.01.2022 Warm Sprouted Moong Dal Salad . Moong Dal (green gram) is known in Ayurveda as a vegetarian superfood. Packed with protein and low in carbs, it is a great add...ition to your balanced diet. The legume becomes more bio available to the body when it is consumed in its sprouted state. Rich in antioxidants and fiber it helps to support digestion as well as lower cholesterol. . Ingredients: 2 cups Moong Dal 2 cups warm water . Preparation: Wash the Dal thoroughly and then soak it in warm water overnight Drain and rinse off water the following morning and place in a small colander or container with holes that is lined with a kitchen paper towel. Spray the Dal with water often to keep moist and in sunlight if possible. It should start to sprout in a day or two. Keep spraying and rinsing as required. Do not allow it to dry out completely. Once the spouts reach a desired length, they are now ready to be consumed. In a pan, place some water and boil it. Add the Moong sprouts to quickly blanch for about 30 seconds. Drain and keep aside. Meanwhile, finely chop a small onion, tomato, coriander, green chilli and bell pepper. Toss the moong dal with the fresh veggies and the dressing. Dressing : 1 tsp Sesame Oil 1 tsp Lemon juice Pinch of Paprika Pinch of Pink Himalayan Salt Freshly ground black pepper . Enjoy as a salad or accompaniment to a main meal. . . 02.01.2022 WE THE HUMANS: Humans are at their best when they eat the food which is best adapted for their nourishment. When we depart from this fundamental basis, we drift... away from the standard of health. Unnatural food is difficult to digest, and hence we get digestive disorders followed by indigestion, inflammation, and congestion. The bowels are the disorders with constipation or over action. The effort to free the system from large quantity and irritating quality of food, produces fever. Coarse and fatty animal food disturbs the liver and kidneys. The skin cannot throw off the superfluous matter. Riotous eaters of flesh get gout and are prone to apoplexy. The impure blood made of unnatural and often diseased food produces bad effect on bones, weakness of tissues and weak immunity with skin diseases and even cancer. In a word, there is not one of the diseases that afflict and destroy humanity, which may not be produced by an unnatural and unhealthy diet. It is what we take into our bodies; the bad air we breathe; the bad food we eat; the foul water or exciting and intoxicating beverages we drink, that fill us with disease, cloud our intellects, inflame our passions, and shorten our lives. These are the reasons which create or mutate viruses, bacteria’s, and fungus (Krumi Vicahar or Germ thought of Ayurveda). We humans are responsible to deform the beautiful world; we fill it with disease and pain, with vice and crime, with needless misery and premature mortality. We kill ourselves by our vices, and, as if that were not enough, we slaughter each other in wars, whose horrors and atrocities are the aggravation and intensification of the horrors and atrocities of what we look upon as our peaceful and normal condition. We must unite and we must improve our food, water and air supply- vaccinations, chemicals and weapons cannot support us last to save Mother Earth and Humanity. _ Dr. Bharat Vaidya
