The Paella is more complex than you may think Andaluse at Prahran Market spends several days each week preparing this flavour base for our renowned dish. ... Our Sofrito starts with manually cutting, slicing and dicing the freshest Prahran Market vegetables. Then it takes an entire day to then slowly saut our Sofrito with our own blend of Spanish spices and herbs including smoked pimenton and pure saffron threads. 21.01.2022 Patatas Bravas! There is nothing better than tucking into a bowl of piping hot chips this winter. Andaluse @ Prahran Market does it the traditional Spanish way.... We use select Market Desires that we cut into bit size chunks then double fry to give them that extra crunch value! Dusted in Pimenton (Spanish Smoked Paprika) Seasoned with Rosemary Salt and tossed in chopped parsley. To finish we drizzle our crispy delights with our very own Brava Sauce and Aioli But wait, the best bit is that it only costs $6.50! See you soon at Prahran Market where it is all about taste

17.01.2022 Andaluse is not all about Paella, in fact another very popular item on our menu is our Spanish Meatballs known as Albondigas. These little spicy bundles of joy have been gladly inducted into Urbanlists top 100 best eats for 2015. There is a reason why our meatballs are getting so much attention by our regulars and fine food connoisseurs alike. This is a recipe that Sean first started refining as Head Chef of Garcia & Son. A Dish that starts with the finest quality beef and p...ork cuts from our favourite butcher combined with an aromatic blend of 16 herbs and spices with a touch of grated apple. Then they are rolled and sealed in boiling chorizo oil using a giant paellera (the pan in which our paella is made) Finally they are introduced into our Tomato & Red Pepper Sauce and cooked slowly to absorb its wonderful rich flavour. 15.01.2022 Part 2: Andaluse at Prahran Market Andaluse premiered as a brand for the first time at Prahran Markets Spanish Festival in 2014. The queues were large and eager to sample our Seafood Paella. It was such an overwhelming success that entire pans were sold out even before they were fired up. Shortly after we set up shop in the Markets new Pop-Up Street Food Hall. ... Andaluse quickly gained a World Class reputation with our signature variations of Paella. Chef Sean added his Albondigas (Spanish Meatballs) to the menu and won the accolade of UrbanList that featured these tempting little bundles of spicy joy in their Top 100 Best Eats for 2015. When you consider Seans Spanish cuisine heritage it is easy to understand why. Stephen Downes known as Australias harshest food critic once labelled Seans menu as Head Chef of Garcia & Son as A Kaleidoscope for the Palate It wasnt long before Andaluse was inundated with requests for private and corporate functions and there is nothing better than a Paella Party. Andaluse has travelled far and wide cooking in our Mega-Pans for so many special occasions. For such events we offer a substantial and customised menu to choose from including 4 types of Paella, an eclectic variety of Tapas, Flamenco entertainment, Bar Staff and our own special blend of Lees Sangria. Prahran Market has been a wonderful base for us to start this journey. We wish to return someday when the right opportunity suits us. We are currently considering several Markets that we have interest in. 09.01.2022 Sadly this week will be our last operating from Prahran Market. We have some exciting news to share in the upcoming days as to our temporary new base on Chapel st. As we move forward we would like to take you on a culinary journey of sorts. A trip down memory lane. Andaluse is joint collaboration between Ex-Restaurateur Lee Glasgow and acclaimed Chef Sean Pentecost.... Once upon a time Sean was recruited by Lee to head his kitchen at Rhone Wine & Tapas. Sean quickly created a fresh, vibrant and eclectic new menu. It is during this time that the pair discussed creating a new brand Andaluse taking fine Spanish cuisine to the people. The vision was to provide customers restaurant fare of the highest quality at a street food price point. It wasnt long before Prahran Market came knocking at the door. So here are some of the Sights and Tastes of History in the making from the days of Rhone Wine & Tapas. We have had offers from several Markets although the sites offered as yet havent suited what we require for our style of Big Pan Paella. We hope to be firing up again soon.
