22.01.2022 Here is a delish quick and easy recipe to keep you nourished and warm on these chilly nights. Pesto Minestrone Ingredients... 1 tbsp. coconut oil (or ghee if not vegan) 2 medium carrots, chopped 1 medium leek, thinly sliced 3 large red potatoes, chopped 8 cups vegetable stock 1 bunch broccolini, stems sliced and heads chopped 1 can butter beans rinsed and drained 2 tablespoons vegan basil pesto Fresh cracked pepper for serving Nutritional yeast for serving Directions 1. In a large saucepan, heat the oil or ghee on medium flame. Add carrots and leek, cook for a few minutes to soften leek. Add potatoes and vegetable stock. Turn up heat until it reaches the boil then reduce heat to simmer and cover with lid. Cook until potatoes are tender. 2. Add broccolini and simmer until tender. 3. Stir in butter beans and pesto to heat through. 4. Ladle into bowls and sprinkle with nutritional yeast and add some cracked pepper to taste. 5. 21.01.2022 So this is 49. Wow what a ride. Some really interesting things have come up for me in the lead up to today. I have had a lot of flash backs to my 30th birthday. My doctor found a lump in my throat just a few days earlier. Instead of planning how I was going to manage my hangover after the big night out, I was thinking about what would happen to my kids if it turned out to be the big C. Fast forward 19 years and how incredibly lucky am I to have raised my babies, married ...the most beautiful human, found soul enriching work and deepened my connection to my family and dear friends. I wonder if I would have had this life if I didn't have cancer. I wonder why I have been blessed to live all these years when so many beautiful people have left this world so prematurely. I don't know why I am still here but I do know for me the trees are greener, the stars are brighter and my heart is so full of gratitude for all I have.
