17.01.2022 Im excited to share that this week marks the start of my new marketing campaign Cooking in Anitas Yard #cookinginanitasyard. I have always been known as a passionate cook to my friends, family and even my clients! So, Ive decided to share some of my easy recipes that have been enjoyed over the years. Everything I cook is pretty simple but delicious and people are amazed at how easy the recipes are to follow. So look out for recipe cards in letterboxes in Attadale and Mel...ville over the next 12 months and then try them I would love to hear of any variations you tried and of course a photo of your dish. Dont hesitate to post on my Insta/Facebook and hashtag #cookinginanitasyard! This months spaghetti meatballs has always been a family favourite. My fave variation is to first roast fresh grape tomatoes. I must confess my daughter Evie first gave me this idea but I have tweaked it over the years so I think I can sufficiently say that it is now mine! The variation is as follows: 1 kg grape tomatoes 3 garlic cloves whole Half a cup of fresh parsley diced Half a cup of fresh basil diced 2 tablespoons of extra virgin olive oil Salt and pepper This is really easy: Pre heat oven to 180 C Place the grape tomatoes and garlic in a large roasting pan. Add the parsley, basil oil salt and pepper and stir to coat. (use hands if you like) Place the roasting pan in the oven for approximately half an hour or until the grape tomatoes are nicely roasted. Follow the meatball recipe but replace the passata sauce with the roasted grape tomatoes. I always say to my friends and family keep stirring with love. The flavours will mould together and the oil will separate. Thats when you know its the perfect time to serve.
16.01.2022 Its a story many West Aussie homeowners could relate to: Wanting to undertake a small project to improve your house, like just putting up a deck or a shade sai...l, but being forced into a time consuming process to get planning approval before going ahead. Its frustrating, and for some of those minor projects it just isnt a common sense approach. Yesterday, we announced the most significant overhaul of WAs planning system - ever. Among a range of other sensible changes for businesses and communities, were slashing red tape to let homeowners get on with small projects to improve their properties. Specifically, were putting in a state-wide framework of exemptions from planning approvals for minor works including minor extensions, patios, carports, shade sails and pergolas. Where required, building approvals will still apply, but those projects will no longer need to go through the planning approvals process with local governments. Additionally, the reforms include major changes to streamline the process for the approval of new homes, as well as delivering improved and consistent process for communities to have their say on planning issues. The changes also include changes to help small businesses and to speed up the process for getting major job-creating projects off the ground. Reforms to the planning system might sound a bit dry, but these are important and common-sense changes that will have a big impact for countless Western Australians. 12.01.2022 #cookinginanitasyard MY FAVE FREEKAH SALAD Now dont be freaked out by the name and the amount of ingredients. Make this once and it will become a favourite. Add cooked chicken and it becomes a wonderfully filling lunch or use it as a great side.... Ingredients: 1/2 cup freekah (found in the health food section of supermarkets) 1/2 cup pearl barley Olive oil salt pepper 1/3 cup lemon juice 2 celery stalks finely diced 1/2 red onion finely diced 1 red capsicum finely diced 1/2 cup fresh parsley chopped 1/2 cup fresh mint chopped 80g Greek Fetta crumbled 250g diced grape tomatoes 2 Small Lebanese cucumbers deseeded and finely diced 1/2 cup currants 1/2 pepitas 2 tbl spoon pomegranate molasses You can replace the currants with the seeds of one pomegranate as an option, but this can be expensive. Method: Combine the pearl barley and freekah with 5 cups cold water. Bring to boil and then simmer for 20 minutes. Drain and allow to cool. Combine freekah and barley with all other fresh ingredients, currents and pepitas Add lemon juice and pomegranate molasses and stir Place in a gorgeous salad bowl (presentation is so important) Drizzle with olive oil Season with Salt and pepper Dont hesitate to post it on my Instagram/Facebook and hashtag #cookinginanitasyard Enjoy!

11.01.2022 #cookinginanitasyard CHICKEN CASSEROLE WITH PAPRIKA AND CHORIZO This amazing winter casserole will fill the belly and warm the heart. Its super easy, a one pot wonder and can be finished in less than an hour.... Ingredients: 1 large free range chicken cut into pieces. (See the gorgeous guys from Melville Heights Meats and they will be happy to assist. Tell them Anita sent you!) Melville heights meat supply 1 chorizo sausage sliced thinly 1 large onion halved and sliced thinly 3 fresh paprikas sliced (use 1 large red capsicum if you cant find paprikas) 1 large green capsicum halved and sliced 6 garlic cloves minced 500ml chicken stock 2 punnets of fresh grape or cherry tomatoes (or if you must, use 1 can of chopped tomatoes but reduce the passata by half.) 1 teaspoon cumin seeds 1 teaspoon cumin powder 2 teaspoon paprika 1 teaspoon chilli powder (optional) 1 big handful of pitted Spanish olives 1 big handful of fresh parsley chopped (Scutti fresh foods normally sell big bunches) 1 tablespoon olive oil Salt and pepper 1 jar of tomato passata Method: Season chicken with salt and pepper and add the paprika Add oil to a large pot and fry chorizo until its crispy. Remove and place to the side Add chicken in 2 batches and brown on each side. Remove and place to the side Add onion, garlic, paprika, capsicum and cumin seeds to pot and fry for around 5 minutes stirring occasionally Add cumin powder and chilli powder and mix Place chicken and chorizo back in the pot along with the tomatoes, tomato passata, chicken stock and half of the parsley. Bring to the boil and then simmer for half an hour. (see note) Garnish with the remaining parsley and serve with broccolini and rice. Note: A trick to this recipe is to remove the chicken and chorizo after half an hour and continue to simmer the sauce for a while. This will allow the sauce to thicken and the oil to separate. Oh and if the kids hate olives take them out. They look good but dont really affect the taste of the casserole. Dont forget to allow it to cook until the oil separates from the other juices. 06.01.2022 #cookinginanitasyard BOCCONCINI BRUSCHETTA This weeks recipe is a quick and easy bruschetta which is a hit every time I serve it. I am constantly asked for this recipe as it looks complicated but in fact it's very simple!... Ingredients: 3 or 4 punnets (1 kg) of firm grape tomatoes sliced in half or fours depending on size A large handful of Fresh basil, chopped A large handful of Fresh Parsley, chopped A tub of bocconcini cheese, each sliced into 4 A jar of pesto Crusty bread 1 Lemon Olive oil Salt Pepper Method: Place tomatoes and half the basil and parsley in a long bowl. Squeeze lemon, salt and pepper over and mix Spread out tomatoes and add the remaining basil and parsley over the top. place the sliced bocconcini evenly to cover the bowl. Using 2 teaspoons dab pesto on each slice of bocconcini. (It looks even better when you use a icing piping bag) Drizzle with olive oil and a bit more lemon. Slice bread and butter on both sides.
