23.01.2022 SPINACH & FETA ROLLS Ingredients: 250g baby spinach, chopped. 200g feta, chopped into small squares. ... 1 brown onion & 2 garlic gloves, fried. 1 shallot stalk, chopped into small pieces. Salt and pepper 1-2 tbls dried basil or mixed herbs 2 sheets of puff pastry (or any kind of pastry) 1 egg or flax egg (optional) Method: -Fry the onion and garlic. Once done, add the spinach to wilt. -Combine all ingredients in a large bowl. -Cut each piece of puff pastry in half and brush egg on each. -Place a handful of mixture into the centre of the puff pastry and spread to the edges. -Fold the bottom 1/3 of the pastry on top of the mixture with a little egg to keep it together. -Repeat with the top 1/3 of pastry. -Cut in half and place on a baking tray at 200 degrees for 20min or until golden brown.
