25.01.2022 This is my current favourite recipe, from the Weekly Times: "COMFORTING CASSEROLE" 1.5 kg casserole beef, in 2cm cubes 100g thick-cut bacon, diced... oil, s&p as requred 1 medium onion, coarsely chopped 2 celery sticks, 1 carrot diced 2 cloves garlic, crushed 2 teasp thyme 1 teasp fresh marjoram 2 strips orange zest, 2cm wide 2 bay leaves 1 cup vermouth / wine 2.5 cups chicken stock 3 cups parsnip or zucchini in 2cm chunks 3 cups carrot pieces, 2cm chunks 2 tablesp coarse-grained mustard Fry the bacon, remove. Brown the beef in small batches, remove. Add veg, brown, then add herbs and orange zest. return bacon, add wine and boil to reduce. Add chicken stock and return beef to pot. Bring to a boil, cover and simmer for 2 hours. Add mustard, adjust s&p and serve. Yummy!!

24.01.2022 RECIPE OF THE MONTH : MORROCCAN BEEF TAGINE Everyone is raving about this dish, and it's SO easy! The Ras-el-Hanout spice is available at the South Melb market, but ordinary Moroccan spice would do instead.... 1200g stewing beef 2 onions, finely chopped fresh coriander bunch 2 x 400g tin of chickpeas 400g tin of chopped tomatoes 800ml veg stock 800g pumpkin in 5cm cubes 200g prunes, stoned and chopped 2 tablesp slivered almonds, toasted Spice rub: s+p 1 tablesp Ras-el-Hanout spice mix 1 tablesp ground cumin 1 tablesp ground cinnamon 1 tablesp ground ginger 1 tablesp sweet paprika Mix all spices in a bowl, massage beef cubes with it and leave to marinate overnight or as long as you can. Brown meat in batches in olive oil, then add onion and coriander stalks, fry 5 min, add toms and chickpeas and 400ml stock. Simmer for 90 min, add pumpkin and prunes, simmer for another few hours. Taste and season, serve with fresh coriander leaves and toasted almonds - and brown rice or couscous. YUMMO!!

They can access shade & shelter, no grain, antibiotics or hormones, and importantly- pain relief at castration time!

22.01.2022 What's different about our meat? It's guaranteed to be hung for 3 weeks, thereby increasing its flavour and tenderness. Our animals are well bred and well fed and happy and contented. Stress can cause meat to be tough, so we handle them with care. We take them, with a buddy or 2, to the abattoir in our trailer, playing soothing music as they travel....... Then they're expertly butchered in Inverloch to YOUR SPECIFICATIONS and delivered to your kitchen that evening. We have 5/8 of a prime animal up for grabs on Sunday Jan 8th. 15.01.2022 A TROPICAL TWIST FOR YOUR CORNED SILVERSIDE :-) Time: 2 hours Ingredients: a medium corned silverside (1kg) 1litre pineapple juice 1litre tropical juice... Add half of each juice to the pot with the meat, bring to boil & simmer for 1 hour. Drain & add rest of juices, bring back to boil & simmer till done. Thanks to our Motorbike mates for this recipe! We're sold out for Christmas, but you can order a portion of another Angus animal, free delivery on Sun Jan 8, Weds Feb 1, Weds March 1, Weds April 5 etc. Everyone raves about our meat!

14.01.2022 I love happy customers. The district nurses who bumped down our track for weeks & weeks, decided to buy some beef. They organised themselves to share a whole animal, so paid only $17 per kg instead of $22 for 1/8 or $20 for 1/4. They got really premium beef & I had to do less driving :-) Next available animal will be ready on Weds Dec 13th - lots of time to organise yourself for those yummy Summer BBQ's. You don't pay until you receive the beef, so order now & we'll do the rest.

13.01.2022 Thanks to my sis-in-law Di for this recipe: "Bairnsdale Oyster Blade" 4 pieces of Annie's Angus Oyster Blade (1.5cm thick) 4 tbs plum sauce... 45 gm French Onion soup mix, salt reduced Place beef in casserole, spoon over plum sauce. sprinkle with soup, add enough water to cover. Bake 160 C for an hour. Turn meat and bake another hour. Yummo!!
