25.01.2022 RECIPE IN VIDEO We know leafy greens are good for you, right? Here is why they are good for you and a way to get them into your kiddos. Leafy greens contain folate which our body needs to make healthy cells. Our body is making cells every second of the day so demands for folate can be quite high.

I do this when our house gets a bit crazy. I find that everyone starts listening subconsciously and it mellows everyone down a bit. ... 23.01.2022 FUN FACT for today: Dropping my daughter off at school today I noticed how much taller all the kids are! When our kids sleep they release growth hormone.... I wonder... with all the down time they've had lately and sleep-ins in the mornings, have they all had a chance to shoot up? Moral of the story is that sleep is awesome, for so many different reasons! Get your snooze on tonight

19.01.2022 My kids got a lunch order today Chicken nuggets and fries (well, sweet potato fries which are amazing when dipped in some mayo). Chicken nuggets are one of those foods you look at and think "hmmm, what's really in them?" Chicken nuggets are also a favorite with kids. It's something fun that pops up at parties and you get to squirt tomato sauce all over them.... ofcourse kids love them!... At least with these ones, you know exactly what's in them And they are gluten free too You need to cut up 2 chicken breasts into nugget size pieces. Then get 3 bowls with the following ingredients.... 1. Gluten free flour or tapioca flour 2. A beaten egg 3. One large bag of crushed up plain corn chips (like bread crumbs in the food processor). See below for flavor options. Take a chicken piece and coat it in the flour, then dip it in the egg, then press it into the corn chip crumbs. Pop them on a tray and bake in the oven @ 180for approx 30 min or till cooked. Cool, dip, eat. To give them some extra flavor, you can add the following herbs and spices to your corn crumb mixture 1. Half tsp each of garlic powder, onion powder and dried oregano. 2. Half tsp each of paprika, dried oregano, cumin, ground oregano, a quarter tsp of cinnamon and zest of one lemon.

16.01.2022 Anyone else have this problem with school lunches....? I have a boy in grade six and a daughter in grade 2. This morning, my daughter asks why her brother doesn't have a bento lunch box like her? My answer was "because you like you sit down with your friends and talk whilst you nibble on your different types of snacks. Where as your brother, well he likes to grab a piece of food with one hand and scoff it down as he runs to the soccer pitch with his ball in the other hand lo...oking for his friends. He does this because he doesn't want to miss out on a second of playing time and hopefully he hasn't choked in the process". In reply, my son said "yep! Mum gets me". Anyone else have a similar situation? If I pack too much it doesn't get eaten because it takes too long to eat. If I pack less I feel bad that I'm not giving enough food for the day! Can't win at the end of the day To help with the problem they have been making their own lunch boxes lately. I do give it a once over at the end though- can't help it!! Mind you, he is ravenous when he gets home :)

10.01.2022 It's spring!! Melbournians, we did it and survived winter (but I must say, it was a kind winter with mostly sunny afternoons, thank goodness). Spring makes me feel warm and fuzzy because it means I can get my veggie patch going. We all know that we need nutrients to be the best that we can be, and veggies that have just been picked are the most nutritious of all! Every day after, the nutrient level drops. When we built our house, I wanted an area for a veggie patch. I had n...ever grown anything before () but I just knew that I was going to figure it out, eventually! And (7 years later mind you), whilst I've had some success and lot's of failures with my veggie patch, I'm not giving in and will go at it again this season. When I have had success, it has been abundant to the point where I can share my produce with others, reduce the grocery bill, and literally just go into the veggie patch to make a meal without going to the shops. I have faith that it's going to be a good season his year :) :) You don't need a patch in the ground, even a pot will let you grow food. 08.01.2022 Reducing EMF radiation... We've been thrown into a situation where we must be using technology to go about our day meaning that we are exposed to extra EMF radiation. If you have ever listened to the amazing brain surgeon, Dr Charlie Teo, then you would know just how dangerous EMF radiation is to us, and the scary thing is, the load is getting and bigger.... I'm watching my kids sit at a laptop daily, using wireless accessories and it makes me really uncomfortable. Here I talk about some easy things you can do to reduce their exposure to EMF radiation. 01.01.2022 Mushrooms. So good for you. To get them into my daughter though, it takes pizza... Pizza. It's been given a bad wrap because of the processed kind. BUT, really, if you make it yourself, it's just flour, water, yeast and toppings... and your toppings are endless We usually make pizza's when I don't have anything else planned because you can raid the fridge and pantry and BOOM, pizza.... Our daughter has sliced mushrooms, sliced olives, mozzarella and pineapple. Our son has mushrooms, red onions, olives, mozzarella and pineapple. My husband and I have mushrooms, olives, onion, capsicum, baby spinach and chilli, and anything else left over in the fridge Don't be intimidated by the dough. It's easy, therapeutic to make (love rolling out dough), cheap and makes 4 large pizzas. You can knead this in a stand mixer or by hand on the bench, but here is the basic recipe... Take 500gm of flour and mix with 1 tsp of salt. Make a well in the middle and add 2 tsp of yeast, 2tsp of sugar, 1tbl of olive oil and 310gm of warm water. Let it sit for 10min for the yeast water to bubble, then knead together for 12-15 min. Put the dough in an oiled bowl and cover with cling wrap. It needs to double (or tripple) in size in a warm spot, takes minimum 1 hr. I like to put the oven on for 2 min to warm up, then turn the heat off, and put my dough in there. When ready, cut the dough into 4, and roll each out into a circle. I then put them on a peice of baking paper on the pizza tray. Put your sauce on (passata, salt, dried oregano) and go crazy with your toppings. To cook, your oven needs to be hot. Really hot. 230-240 for 10min or till the cheese is browned. See, nothing wrong with pizza. Just load them up with the good stuff Oh, and we like pineapple on pizza
