15.01.2022 COPPER ~ we’ll let you into a secret, here at Antica we are cooking with traditional copper pots. It’s a traditional method of cooking from Paolo’s region dating back thousands of years to the Samnite civilisation. Copper has all sorts of miraculous properties when using it for cooking. Paolo’s been toasting local hazelnuts from #fourjayfarms in a copper pot to enhance and release their natural flavour for our hazelnut risotto. This little beauty was brought back from the... village of #Agnone in the remote region of #Molise next to Paolo’s region of Ciociaria. They have been mining & crafting copper items in Agnone since Samnite times (pre-dating the ancient Romans) and traded with the neighbouring Italic tribes over the Apennine Mountains in Ciociaria & Abruzzo. 13.01.2022 WHO LOVES US, FOLLOWS US say it with us: We’ve been getting so much love lately, thanks to all our fabulous private groups in August who really dove into the whole Antica experience. It’s really not a restaurant! This is like being in regional Italy! It’s even more than an experience, it’s a story! - we have absolutely adored these reactions And it’s absolutely a story. This chapter in September usually sees us hosting our Wild Heart of I...taly food & wine adventures in Paolo’s home region of Ciociaria. And for the past seven years we have spent the entire month of September with Paolo’s young daughters in Italy. We all had a meltdown about this a few weeks ago, on both sides of the planet. So we blocked out the first possible opportunity in September to go on a roadtrip, let the wind blow and move forwards. We’re on a mission for inspiration. We’ve closed Antica this weekend. My all-time favourite story is the one where I drove to Carcoar for a coffee with Tomolly last April and came home with a restaurant We were living in Carcoar and setting up Antica by July. Then hosted the most incredible food & wine cultural adventure to Ciociaria with our Wild Heart of Italy tours in October. In March we opened Antica, closed it 3 weeks later - and the rest, as they say, is hist...ory. I’m also chief dishwasherupperer at Antica, which I have to admit at times has made my masters degree in strategic communications seem somewhat of a tragic waste of money. 05.01.2022 A gorgeous little feature on Antica Australis in Hunter Hunter magazine with absolutely beautiful photos - thanks guys! Was such a pleasure to host you in Carcoar recently. Ciociaria was once the favoured foodie destination of the ancient Roman emperors, who loved its forests full of wild venison, wild boar and forest truffles, it’s plentiful olive groves, vineyards and eminently drinkable wines. The original name of what is now known as Italy was Víteliú. The Italic tribes... were conquered by the ancient Romans circa 300 BC but their spirit lives on in their food, stories, music and dialect. Paolo has brought a little of the wild Ciociarian spirit to the untamed ancient southern land we now call home. In Paolo's home region of Ciociaria our friends who run locandas and restaurants not only adhere to the slow food ethos of sourcing produce within a less than 100 mile radius, they actually prefer to serve food and wine made from produce that is indigenous to the location they are living and working in.... They believe that food and wine should be consumed in the context of where it naturally grows to truly derive the full benefits of eating well: happiness & healthiness! We have been so thrilled to partner with Gerald Power and his awesome team at Indigenous Cultural Adventures to start introducing our diners to the wonders of Australia's indigenous produce and ingredients. 03.01.2022 BEACON OF LIGHT ~ Paolo is from the central Italian region of Ciociaria and bases his cuisine on the relaxed locanda style of authentic home cooking. A crespelle with Gorgonzola, proscuitto and house-made fig and ginger jam starts proceedings on the winter menu and the well-paced four-course meal is a triumph of regional produce and cooking straight from the heart. 02.01.2022 VÍTELIÚ ~ we’ve been working on a beautiful collaboration project with local artisan Louise Purcell of Carcoar Pottery to create bespoke platters and espresso jars for Antica. And ohmygosh what a result! Louise completely soaked up our brief on the ancient origins of the land of Italy: the prehistoric migration from Indo-Europe of the original Italic tribe of the Víteliú in the Iron Age to settle in the wild heart of central and southern Italy to form the Sabine and Samnite ...civilisations [ruling the lands for 3000 years until being conquered by the ancient Romans in 300 BC]. Legend has it that the original tribe migrated following a sacred bull who led them to the abundant pastures of Molise - still to this day the remotest region of Italy [and possibly its most magical!] ======= We are fully booked this weekend and almost fully booked for the rest of September. 01.01.2022 AN ADMIRATION FOR CUCINA POVERA: the kitchen of the poor. Beautiful article from AFAR magazine. This is a great introduction to the regional Italian concept of 'cucina povera', recipes that orginated from the kitchens of the so-called poor. Don't ever be fooled by the direct translation of 'povera' into 'poor' - for thousands of years regional Italians have been rich in an abundance of fresh produce, creativity, tradition and spirit. We are serving up:emu on wombok with bush pesto; crocodile marinated in lemon myrtle; slow-cooked kangaroo shank ragu cannelloni (made in the ancient Roman style using crepes); warrigal & rivermint greens warmed with local @kalav...istaorganics olive oil; and finger lime gelato with roasted wattleseed biscotti crumb.
