12.01.2022 Broccoli and Feta Roasted Capsicum and Spinach Mixed Mushroom and herbs Cherry tomatoes and basil Kale and grated sweet potato. ... Choose a recipe variation, and start by whisking together the frittata base: a simple mixture of eggs, almond milk (or any milk), garlic, salt, and pepper. Then, sauté your veggies in fry pan or cast iron skillet just until tender. When the veggies are ready, stir in any spices or herbs before adding the eggs. Pour in the frittata base, and shake the pan gently to distribute it among the vegetables. Sprinkle your frittata with cheese and transfer the pan to a 200-degree oven. Bake for 15 to 20 minutes, or until the eggs are set and the top is lightly golden around the edges. Allow the frittata to cool slightly before slicing and devouring! Tips! Spread your veggies evenly throughout the pan before pouring in the eggs. Once you pour the egg mixture in, you won’t be moving the vegetables around much (or you’d end up with scrambled eggs!), so make sure the veggies are spaced evenly in the pan to get a final frittata with veggies in every bite. Change it up! Play around with these flavour combinations. 09.01.2022 This week's cook-a-long is Stir fry! Join us at 6pm this evening here on facebook live. recipe Stir fry - 1 cup rice or a packet of noodles... - 2 tbls cooking oil (any type of oil) - 3 cloves garlic - 1 medium piece of ginger - 250 gms flavoured tofu or chicken - 3 carrots cut into fine strips - 1 bok choy - of a broccoli, cut into florets - Handful of snow peas, cut in half - 3 spring onions, sliced up - 50gm cashews, preferably roasted - 4 tbsp soy sauce, - 1 tbls seasame oil - Cook rice or noodles according to packet instructions. - Heat oil in a frypan on medium-high heat and add ginger and garlic, fry for 2 minutes. - If you’re using chicken cut into smaller pieces and in a separate frypan (or use the frypan first) cook the chicken in oil, turning it over to cook evenly. Add to stir fry at the end. - If you’re using tofu, add it first to the pan and fry until golden brow. Then add carrots, broccoli, snow peas and cashews, cook until the vegetables are tender. Add the soy sauce and sesame oil and lightly toss to combine. - Serve on top of the rice and sprinkle the spring onions on top.
