24.01.2022 BBQ cajun salmon with mango salsa INGREDIENTS 1 tablespoon olive oil 1 teaspoon ground cumin... 1 teaspoon ground coriander 1 teaspoon ground paprika 1 teaspoon onion powder 1 teaspoon dried oregano 4 (about 120g each) skinless salmon fillets Baby rocket leaves, to serve MANGO AND AVOCADO SALSA 1 mango, stoned, peeled, finely chopped 1 avocado, stoned, peeled, finely chopped 1 Lebanese cucumber, seeded, finely chopped 1/2 red onion, finely chopped 1 long red chilli, seeded, finely chopped (optional) 1/2 cup coarsely chopped coriander 2 tablespoons lime juice METHOD Step 1 Combine the oil, cumin, coriander, paprika, onion powder and oregano in a medium bowl. Add the salmon and turn to coat. Season. Step 2 Heat a barbecue grill or chargrill on medium-high. Cook salmon for 2-3 mins each side or until cooked to your liking. Transfer to a plate. Cover with foil. Set aside for 5 mins to rest. Step 3 Meanwhile, to make the mango & avocado salsa, combine the mango, avocado, cucumber, onion, chilli, if using, coriander and lime juice in a bowl. 21.01.2022 Low Carb Crunchwrap Ingredients 1 Head Cabbage cored... 1 Cup Sharp Cheddar Cheese 2 Tablespoons Mild Tasting Oil 1 Pound Ground Beef or ground turkey 4 Tablespoons Low Carb Taco Seasoning 1 Cup Low Carb Nacho Cheese 1/2 Cup Sour Cream 2 Cups Lettuce shredded 1 Tomatoes diced + deseeded Instructions Cabbage: Bring a pot of water large enough to submerge your head of cabbage to boil. Once boiling, add the cored cabbage, and allow the cabbage to cook for two minutes. Use 2 sets of tongs to remove 1 cabbage leaf at a time from the cabbage. If they aren't easy to remove, you'll need the cabbage to cook a little longer. Well need 12 stemmed cabbage leaves for our crunchwraps, so save the center of the cabbage for another recipe. Set cabbage aside on a plate while we prep the filling... Filling: Remove the thick part of the cabbage leaves by sliding a sharp knife over the top. Preheat oven to 400 F and line a baking sheet with parchment paper. Sprinkle 1 cup of cheddar into flat 4" round circles. Bake in preheated oven for 6 minutes, or until the edges start to brown around the edges. Meanwhile, heat vegetable oil in a large skillet over medium-high heat. Add beef, breaking up with the back of your spoon into small pieces as it cooks. Cook until completely brown. Drain excess fat from the pan, then return pan to heat. Stir in taco seasoning and 2/3 cup of water. Cook for 2-4 minutes, or until the sauce thickens. Assembling: Place 3 cabbage leaves down on a flat surface with the center of the leaves slightly overlapping in the middle. Star with a dollop of nacho cheese (or shredded cheddar), then meat, cheese crisp, sour cream, tomatoes, shredded lettuce, and last another dollop of nacho cheese. Tear each cabbage leaf in half so it is able to fold more easily, and fold each half in toward the center. Cut crunch wrap in half, and enjoy! (I find these are easiest to eat with a fork and knife). 10.01.2022 Strawberry buckwheat pancakes Ingredients: 300ml almond milk 1 teaspoon vanilla extract... 75 g blanched almonds 100 g buckwheat flour 100 g rice flour 2 level teaspoons baking powder 1 ripe banana olive oil 350 g seasonal berries , such as strawberries, blackberries, raspberries, blueberries 1 sprig of fresh rosemary maple syrup 4 tablespoons Greek yoghurt , optional Method: 1.Pour the milk into a blender with the vanilla extract, almonds, flours and baking powder. Peel and add the banana, then blitz until smooth. 2.Place a large non-stick frying pan on a medium heat. Once hot, for each portion of two pancakes add 1 teaspoon of oil to the pan with 3 tablespoons of batter per pancake. 3.Push some sliced strawberries or whole berries into the batter, then cook for 4 minutes, or until nicely golden on the bottom (the first pancakes are always slightly awkward as you’re adjusting your temperature control). 4.Flip over, apply a little pressure with a fish slice and cook for 2 minutes, or until golden on the other side, then transfer to a plate, fruit side up. Wipe out the pan with a ball of kitchen paper and repeat the process. Stick the sprig of rosemary into the maple syrup bottle and use it to lightly brush syrup over the hot pancakes. Top each portion with a dollop of yoghurt, if you like, and serve with extra berries on the side. Tips This batter will sit happily in the fridge, so make it the day before, or, if you’re cooking for fewer than four, simply make up the whole batch to do you for a couple of days.

Ingredients:... 2 tablespoons extra virgin olive oil 4 eggs, poached 1 bunch asparagus, trimmed, steamed 40g good-quality rindless bacon or pancetta, cut into thin strips 250g sweet potato, peeled, coarsely grated 1 1/2 tablespoons plain flour (substitute gluten-free flour, if preferred) 1 egg HOLLANDAISE SAUCE 3 egg yolks 1 tablespoon lemon juice 100g butter, melted, cooled Method: Step 1 For the hollandaise, place yolks and lemon juice in a food processor. Season. Process for 1-2 minutes, scraping the side once with a spatula, until thick and emulsified. With the motor running, slowly add the melted butter, 1 tbs at a time, processing for 4 minutes or until smooth and thickened slightly. Transfer to a bowl and set aside. Step 2 For the sweet potato rosti, heat a large frying pan over medium-high heat. Add the bacon or pancetta. Cook, stirring, for 5 minutes or until light golden. Transfer to a large bowl. Add the grated sweet potato, flour and egg. Season. Stir until combined. Step 3 Wipe the pan clean with paper towel. Heat 1 tbs oil over medium heat. Place tablespoonfuls of the sweet potato mixture in the pan, spreading each into a round. Partially cover and cook for 3-4 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel. Repeat with remaining oil and mixture. Step 4 Divide rosti among plates. Top with poached eggs and 1 tbs hollandaise (you will have leftovers, which can be stored in the fridge). Serve with asparagus.
