25.01.2022 Citrusy Shrimp-Stuffed Avocados Ingredients 1 small shallot, finely chopped 1/4 c. mayonnaise... 3 tbsp. sour cream 3 tbsp. lime juice 2 tbsp. orange juice 1 lb. cooked shelled shrimp, chopped 1 c. grape tomatoes, halved 1 serrano chile, thinly sliced 2 ripe avocados, halved, pits removed Cilantro, for garnish Sweet potato chips, for serving Directions In small bowl, whisk shallot, mayonnaise, sour cream, lime juice, orange juice and 3/4 teaspoon salt. In large bowl, toss shrimp, tomatoes, chile and half of dressing. Refrigerate 20 minutes or up to 2 hours. To serve, spoon into avocado halves and drizzle with remaining dressing. 25.01.2022 Roasted Tomato & Chive Pizza Ingredients Nonstick cooking spray 1 large pre-baked pizza crust... 1/2 c. olive tapenade 1 c. shredded Gruyere 1 3/4 c. grape tomatoes 1/4 c. mushrooms snipped chives Directions Spray a large cookie sheet with cooking spray. Place pizza crust on pan. Spread crust with olive tapenade. Top with Gruyere, grape tomatoes, and mushrooms. Spray top of pizza with cooking spray. 22.01.2022 Pan-Fried Chicken With Lemony Roasted Broccoli Ingredients 1 1/2 lb. broccoli, cut into florets 2 cloves garlic, thinly sliced... 3 tbsp. olive oil Kosher salt and pepper 4 6-0z boneless, skinless chicken breast 1 c. all-purpose flour 1 lemon, cut into 1/2-inch pieces 2 tbsp. lemon juice Directions Heat oven to 425F. On rimmed baking sheet, toss broccoli and garlic with 1 Tbsp oil and 1/4 tsp each salt and pepper; roast 10 minutes. Meanwhile, pound chicken breasts to even thickness, season with 1/4 tsp each salt and pepper, then coat in flour. Heat 1 Tbsp oil in large skillet on medium-high and cook chicken until golden brown, 3 to 5 minutes per side. Nestle chicken amidst broccoli and roast until chicken is cooked through and broccoli is golden brown and tender, about 6 minutes. Return skillet to medium heat; add remaining Tbsp oil, then lemon pieces, and cook, stirring, until beginning to brown, 3 minutes. 21.01.2022 Chicken Souvlaki Skewers Ingredients 1 lb. skinless, boneless chicken breasts, cut into 1" chunks 3 tbsp. olive oil... 1/2 tsp. ground coriander 1/2 tsp. dried oregano 1 pt. grape tomatoes 2 cloves garlic, chopped 3 tbsp. fresh lemon juice plus wedges for serving 1/2 head romaine lettuce, shredded 4 green onions, thinly sliced 1/2 c. dill, chopped 4 pitas, warmed Directions Heat grill on medium-high. Toss chicken with 1 tablespoon oil, then coriander, oregano and 1/4 teaspoon each kosher salt and pepper. Thread onto skewers. Place tomatoes and garlic on large piece heavy-duty foil. Sprinkle with 1 tablespoon oil and 1/4 teaspoon each kosher salt and pepper. Fold and crimp foil to form pouch. Place pouch and skewers on grill. Cook, shaking pouch and turning skewers occasionally, until chicken is cooked, 8 to 10 minutes. Just before removing from grill, brush chicken with 1 tablespoon lemon juice. Meanwhile, in bowl, toss lettuce, onions and dill with remaining 2 tablespoons lemon juice, 1 tablespoon oil and 1/4 teaspoon each kosher salt and pepper. 19.01.2022 Caribbean Chicken and "Rice" Ingredients 4 c. riced cauliflower 1/4 c. water... 4 skinless, boneless chicken-breast cutlets 2 tsp. olive oil 1/4 c. sweetened cream of coconut 2 tbsp. Hot sauce 2 limes, halved 1 (15-oz.) can black beans, rinsed and drained Cilantro, chopped, for garnish Directions Combine riced cauliflower and water; cover with vented plastic wrap and microwave on High 6 minutes. Meanwhile, brush chicken with olive oil; season all over with 1/2 teaspoon each salt and pepper. Grill on medium 5 minutes, turning over once halfway through. Whisk together sweetened cream of coconut and hot sauce; brush onto chicken. Grill until cooked through (165F), about 5 minutes longer, brushing and turning 2 more times. Grill 2 limes, halved, until lightly charred, 2 to 3 minutes. Toss cooked cauliflower with black beans and 1/4 teaspoon salt. Reserve 1/2 cup cooking water; drain and return pasta to pot. While pasta is cooking, pulse 1 cup peas in food processor to roughly chop. Add ricotta and lemon zest and pulse a few times to combine (there should still be some chopped peas). Season with salt and pepper. 14.01.2022 Rustic Smoky Glazed Chicken & Veggie Bake Ingredients 2 tsp. smoked paprika 2 tsp. ground cumin... 1/2 tsp. pepper extra-virgin olive oil Kosher salt 1 lb. potatoes 1/2 lb. carrots 1/4 lb. Brussels sprouts 1/4 lb. onion 1/4 lb. halved mushrooms 1/4 lb. asparagus, cut up 1/4 lb. whole green beans 1 1/2 lb. chicken pieces Chopped parsley, for serving Lemon wedges, for serving Directions Preheat oven to 450 degrees F. Make rub: Combine paprika, cumin, and pepper. On a large rimmed baking sheet, toss 2 tablespoons olive oil, one-third of rub, and 1/2 teaspoon salt with potatoes, carrots, Brussels sprouts, and onion. Roast 10 minutes. On another baking sheet, toss 2 teaspoons olive oil and one-third of rub with mushrooms, asparagus, and green beans. Push to one side of pan. On other side, arrange chicken pieces. Sprinkle with remaining rub. Season veggies and protein with 1/2 teaspoon salt. Roast both pans 20 to 35 minutes or until chicken is cooked and all veggies are softened (transfer chicken from pan to platter if cooked before veggies are tender). To serve, garnish with parsley and squeeze of lemon.

11.01.2022 Grilled Ratatouille Linguine Ingredients 12 oz. linguine 2 small zucchini, halved lengthwise... 1 small eggplant, sliced lengthwise 1 red pepper, halved 1 yellow pepper, halved 1 red onion, cut into rounds 2 tbsp. olive oil Salt Pepper Grated Parmesan and chopped basil, if desired Directions Heat grill on medium-high. Cook linguine per package directions. Meanwhile, brush zucchini, eggplant, peppers, and red onion with oil and season with 1/2 teaspoon each salt and pepper. Grill until just tender, 3 to 4 minutes per side. Transfer to a cutting board and cut into pieces. Toss linguine with grilled vegetables, drizzling with more oil as desired. Top with grated Parmesan and basil.

The State & Federal government have implemented some restrictions to gyms like ours including a limit of 20 people (not including staff) in club at a time. Anytime Fitness has worked around the clock to build a booking system that’s linked to our door system meaning we can remain a 24/7 gym while sticking to the governments guidelines. We spent lock down freshening up the club, upgraded bathrooms, fresh paint, Opened up the gym even more and re arranged equipment, Better lighting, re upholstered all equipment so you’re coming back to a brand new Anytime Fitness Colonnades!
